You can also rotate while placing track. Just keep left mouse button pressed and move mouse, that will also rotate the starting arrow of track.

the easements tool is for super-elevation, not anything else. also, at 14:57 you can just hold down CTRL

I am unsure about it. My ts18 addons work with ts17. You yourself should try and see if it works. Loco and other objects might work but routes will not work as it should I guess

Check what track type you are using. Yard and freight has tight turns. Or else you will need to edit track rule file.
