Simple Veg lunch Day 5 Beetroot Curry & Ashgourd Morkuzhambu

  • This video shows how to make a simple veg South Indian lunch. The menu is Beetroot curry and Ashgourd Morkozhambu.The staple food is rice.Morkuzhambu is a curd based gravy
    Ingredients
    For Rice
    Raw rice 1 cup
    Water
    For Beetroot curry
    Oil 1 Tbsp
    Mustard seeds1/2 Tsp
    Urad dal 1 tsp
    dry red chillies 2-3
    Hing/asafoetida a pinch
    Curry leaves a few
    Beetroot 1/2 kg
    Onion 1 (optional)
    Salt
    Turmeric powder a pinch
    grated coconut 1/4 cup
    For Morkuzhambu
    Coriander seed 2 Tsp
    Tuvar dal/pigeon peas 2 Tsp
    Cumin seeds/jeera 1 Tsp
    Green chillies 2
    ginger a small piece
    Grated coconut fresh 3-4 Tbsp
    Ashgourd/white pumpkin chopped a few pieces
    salt
    Curd 11/2 cups
    Turmeric powder a pinch
    Coconut oil 1 tbsp
    Mustard seeds 1/2 Tsp
    Dry red chillies 2
    Curry leaves a few

    Ma'am for 15 years I didn't have to cook as we had someone to cook for us, but the lockdown has taught us so much and ma'am your cooking are made so simple by you that by just following that I am able to make good meal.     I have to hunt up some ash gourd (maybe in the oriental grocery) because this is next on my list. I *finally* managed to get a chilli plant that makes green chillies like the ones used in India. I am carefully watching my plant and hoping that at at least one chili matures to seed before fall sets in and we get our first plant-killing freeze.

      You can substitute ash gourd with pumpkin, squash,or even boiled colocasia

      @@GitasKitchen Thank you and God Bless! I already have two small scalloped squashes from my garden, and yesterday I got a handful of ladies fingers (okra) from the Indian store in the the city next to mine so I'm all set!
      When I watch your videos I marvel at the depth of skill, authenticity and knowledge that goes into your cooking. South Indian cooking is the tastiest and best and you are the best advocate for this wonderful cuisine. Hardly anyone in the US knows about South Indian food, but whenever I make one of your recipes I share it with my neighbours, and one of my friends and now they love it and prefer it to North Indian fare.

    I was thinking about Beetroot this morning and...Vola!!...you made it. Heart to heart connection. I am a teacher and was working in one school in Pondy. Kids used to bring this beetroot poriyal often. I learnt to read write and speak Tamil from my kindergarten kids. Ma'am. ...Thank you for sharing.     Add curd at last and avoid boiling curd otherwise you will lose all its goodness

      Yes. But always reheat in a water bath(Keep bowl of water and heat, then place this morkulambu bowl in it)

      Prestige Platina stainless steel kadai. Cook on medium flame

    For Morkhombhu we don't add jeera, ginger, toor daal. But this is another type of receipe.

      Generally we have aplanaram recipes like midi kozhakattai or arisi upma adai,etc any tiffin without onion in it.

    I usually make plain mor curry without pumpkin in it and don't let it boil. It curdles if boiled. I can keep it for a few days in the fridge. If make with pumpkin, can it last a few days?

      The trick is to bring it to boil on a low flame and then switch it off. Add salt at the end. With pumpkin also it can last in the fridge for a few days

    Why not Channa Dal instead of Toor Dal. Why not to steam Beetroot in Cooker and then do the Cooking.

    Mami, to me the morkuzambhu and Avial recipes are the same. Am I right? Just that the total veggies are a lot more in avial

      We don't use dania and tuvar dal in avial.

      @@GitasKitchen ya actual we don't use tuvar dal in any masala for gravy. And we use dhaniya for sambar masala.
      So for the Curdsambar we use only coconut, jeera and green chillies,ditto for Avial.
      So it seems the same I guess.
