    Very nice intro! Really loving your videos! I just found you a few days ago, and am so glad I did!
    I’m just getting started on the Mediterranean Diet for health reasons. I’ve been through seven years of illness that left me homebound and unable to prepare my own food. My dear hubby tried, but with absolutely everything being dumped on him for most of that time, he kept us fed, but not in the most nutritious way.
    All that being said, it’s been a bit difficult to make the transition. It’s really just the mindset, and practicality of food prep that’s the challenge, because it’s delicious, enjoyable food. And that’s where you come in.
    You are so encouraging in many ways. Encouragement…the gift you give…literally means “to give one courage”. Isn’t that empowering?!?!
    Your cheerfulness, and love of sharing the food you make, the teaching you do all along the way, the simplicity of many of your recipes, and the way you obviously love both the food and making it, are inspiring.
    I hope that you’re getting the recognition that you deserve. Because, young lady, you’re amazing!
    Thank you sounds so inadequate, but thank you for sharing your love of this food, and the way you make it. Thank you for the courage! You’re a huge blessing to me!

    I don't use Instagram but I just made the quinoa tabbouleh and made it w/o mint since that was my one missing ingredient, but even w/o mint it takes amazing. So good I had a small bowl for breakfast!

    I am going to try the feta turkey meatballs recipe, unfortunately I can't afford turkey so I am going to try it with venison I could NOT get my hands on feta I am going to try it with dairy free Mozzarella cheese made with Chickpea. NO FOOD WASTE my ex husband gave me some venison from last year's hunt...worth a try!! THANK YOU so very much for the recipe and the new website is awesome!!!!

    Love watching and hoping to use recipes soon! Do you share the brands or manufacturers of the kitchen tools that you use because that would be helpful too? It didn’t look like you used oil in the pan, assuming it is non-stick? The garlic press appears to work better than any I’ve had and would love to know where to purchase. Also the zester? I’ve never used one but realize it is quite useful. Thanks so much Caroline from Nottingham, Maryland!

      It was a simple kale salad with leftover za’atar marinade used as a dressing topped with feta, pomegranates and pistachios! I’m so so happy you enjoyed the video!

    In Israel we use quite a bit of Za'atar. However, we pronounce it with an emphasis on the first syllable, rather than the second:, i.e.,: ZA'atar

    I love that you use lots of Kirkland products. Who doesn't enjoy shopping at Costco. I have never seen anything but the crumbled feta in So. Cal. Is that just a geographical thing?

      Costco can be super hit or miss with it’s products…sometimes I’d have to go to 2/3 locations in my city because some would carry some products and some would carry others…maybe check another location?

      Hi Star, thank you so much! And while red wine has been researched and shown to have been linked to some health benefits, people all over the Mediterranean drink all varieties of wine! For example, white wine is great in the warmer times of the year and for cooking. White wine also pairs very well with a lot of lighter meals like fish or vegetarian dishes. The Mediterranean diet is all about variety, adjusting to the seasons, and enjoying it all in moderation and balance!

    Great recipes! Though am curious why an aerosol oil spray vs using real oil? You’re not concerned about any toxins from what makes it “aerosol”?

      Yes, great point! However I specially used the brand Chose Foods for my avo oil spray because they make their spray without any additives or propellants.

      I don’t have a specific brand honestly…I suggest, if you have time, checking to see if there’s an middle eastern/Mediterranean grocery stories in your city because they always carry the best brands!

    Can I use ground beef instead of turkey would the cooking time be the same

      You could totally use ground beef in place of turkey! I would suggest cooking the same time but just in case, test a meatball 1 minute before they finish cooking and cut it in half to make sure there is no pink or very little - if this makes sense. Thank you for asking Sylvia :)
