Our Story:
We are Carissa, Iwan & Frankie the sausage dog, and in 2020 decided one night over a bottle of wine that moving from North Wales to Portugal would be a good idea. Within a month we were on the road to Portugal to find the perfect piece of land to call home. We picked up Albi, Joao and Simao the cats along the way, as well as Diogo the podengo and a flock of chickens.
Subscribe to follow our project as we turn an old stone barn into our home, and learn the ropes of looking after a piece of land to make an abundant garden and one day, our very own winery.

The building project is interesting. I can't wait to see how it developed. Of course, the kitties are stars and the rest of the animals seem so happy, too. It's all very delightful and Nick seems to be the wise wizard around town, full of wisdom and helpful.
That was quite enlightening seeing the garden bed being disassembled. Only 18 months and already there was a really good amount of natural activity going on there..
Carissa you really are getting to be a dab hand in the veggies patch.

I'm sure you have lots of experts telling you how to make bread but what I've done with "not so successful " loaves is cut them up...dry them out, then crumb them for other recipes. No waste.
The effort you've put into your gardens is showing! Well done. I just love your animal companions! Diogo and Albie have adorable personalities and I love that you can allow them the freedom to be themselves. Good going on your pallet build, a roof makes all the difference. Keep up the good work!

With bread, if you tap it with your knuckle and it rings hollow, it's done.
Sourdough cooks well in a heavy pot with a lid (for first 20 mins), like a LeCreuset or similar. As it keeps the moisture in, then remove lid for 2nd 20 mins to make crust.
2 other things… prewarm the cooking pot and use baking paper.
The thin tin (without baking paper) will cause the outer edge to cook quickly and is more likely to stick.
That’s by far the best way to cook bread especially sourdough!

I don’t know if anyone else has mentioned this, but your audio is only coming out of the right headphone over the last couple of episodes. It used to be stereo. In both headphones. It’s only your channel. Just letting you know. Love your show though… 😀
Ooohh… just noticed that when you go into the garden the sound is coming out of the left headphone. It shouldn’t be doing that. 🤷♀️

If you’re not using parchment paper to line the bread tin, oil it before putting in the dough- it works and you won’t have the sticky problem (I learned this the hard way too)!

I know you're all done with the roof, we used exactly the same for our garden house...found the plastic comes much easier if the panels are cold and yes you do need 3 sets of hands😂😂. Great job.

To stop the dough sticking to your hands during kneading, simply add more olive oil to your hands and the board you're kneading on. ❤

That plastic is like when you buy one of those lint rollers and can't get the top layer off. Cement! but it doesn't rid you of the lint or cat hair. lol! The roof looks wonderful. I enjoy this learning process. you two make it look easy and so does Nick. So lucky you all have each other to help each other. That's what a community should do for each other. It's one of the things I absolutely love about living in a small rural village in Italy. Community is everything. Thank you for sharing your journey again with us all. Parchment paper to line the tin would save you replacing it? Love how the cats cuddle together like ying & yang on the chair.
I think even John Constable would be jealous of the clouds and trees at around 2:45 - truly beautiful!
Several times I have thought that João and Albi look like the Yin and Yang symbol - they look so content together!

Hey 👋😊 they were definitely damp and starting to rot with the mycelium growing on them, but they weren’t quite spongy yet 🪴

Here I am butting in again from Australia… I don’t know if it is a good idea to feed chickens garlic or onions. It’s a good dewormer but… it could be bad for them. Your chickens may be okay… I hope so.

When the bread is sticking to your hands, I add a little flour to the board and on my hands.

Hi both and thank you for another beautiful video, I love to see your updates. The image quality and filming are gorgeous, and the sound is really good, except that it seems to me when you use the clip on mic, it all goes to one side/ear only. I listen to your videos with headphones. When you had the music + voice when emptying the raised bed for example, I had the music in one ear, and the voice in the other. When there is no music but you have the clip on, it's all coming from one ear only. Just thought I'd let you know, since it must be a setting or a little tweaking or something. It was the same for your (beauuutiful) garden update last video. No sound issues at all other times. 🙂
Was the mic in mono mode? Your voices were only coming out of one headphone... kept changing, one clip on the left, another on the right etc. :)

May I ask if you need building permission to put up all these structures in Portugal? I would love to do some projects like this but here in Greece you need building permission literally everything and something like a pallet cabin would never get permission anyway.

To stop your bread sticking grease the tin and shake flour all over the inside. Tap out the loose flour.

please knead that bread, its so sad to see it coming out of the oven like that. theres methods to knead wet dough (slap&fold, pulling the dough, etc) and u can rub some oil on ur hands to prevent it from sticking .. hope it helps, otherwise gl out there, ty for the vids, ure a wonderful human being carissa
I have stopped sticky dough from sticking to my hands by putting it in the fridge for a few minutes. But, I never tried a few days. Hum…might have to see how that works.
Would you call it cilantro, or coriander leaves, and do you eat it? People eat way more cilantro here, because of Mexican food, but most of us miss out on coriander in southern u.s.

How is your own compost getting on? Its so useful to save money. If the chickens get all your scraps do you rake out their area? I often started my compost heaps with logs, twigs and leaves at the bottom.

I watched the roof part several times and cannot tell if you added two pieces together to form and attached to pallets? Love the music and really enjoy the build, brilliant!
