My mother made egg mayonnaise every Xmas for what we called Russian salad (potatoes cubed, gherkin chopped, ham chopped, peas and carrots.) It is an art to making this mayonnaise and the critical part (according to my Mum, died this year aged 90) is to use only egg yolks (I used the whites to make pavlova) and then drizzle the olive oil in very slowly while beating it on high with an electric mixer, so the volume increases. You taste test it throughout and add lemon juice and salt to your liking. This has been a ritual in my family for 60yrs. Love your videos and the animals.
Hi Clarissa, tip for the mayo: don't put the egg white in it Yolks only and pour the oil in slowly at the beginning so it doesn't curdle. Pour the oil until the mayo is quite thick then add the lemon juice and it will thin a bit. Only add a bit of lemon juice.

The willow you showed on your dog walk can be easily propagated and makes a really cool living fence ( you can weave it) It grows really fast and the leaves are good for feeding sheep and goats. I saw it on youtube : )
You can plant two offcuts, long ones and tie them together at the top to make an arch, they will grow and are very pliable as to how you want to weave your living willow.

You have started my 2024 in a much needed relaxed state. We used to have a black kitty from Jordan that my daughter brought back to the U.S.A., I completely fell in love. He ended up getting fibrosarcoma from a rabies vaccine on his neck. Miss him so much and to look at your black kitty warms my heart. I love all my fur babies, including grand ones! I just love this video, following you along as you do the everyday activities of your homestead! I especially loved your woven raised garden bed which though it took a lot of work, gathering, trimming and weaving the branches, was made from the materials of the things around you and therefore free. Hi, great looking turnip. I just wanted to share a family recipe as I am asked to make it every Thanksgiving. Carrots and Turnips, I am sure you can find many recipes, skin carrots, and turnips cut into 1 inch cubes boil till soft , drain, then smash add salt , brown sugar and enjoy 😋 it's like making mashed potatoes.
Well done with the wattle border. I have seen a lot of people who have been very resourceful in making raised beds here are a few ideas that you might want to bear in mind when you are out and about. Damaged Truck and Tractor Tyres (If they are no good for retreading the tyre fitting stations would love to get rid of them as opposed to paying for removal). Old Pallets cut down and patched, Old stone sinks, Damaged galvanised feeding and watering troughs. Old concrete posts (Stacked). Small tree trunks, old roofing/siding sheets. Scrapped washing machine and Tumble drier drums. I know of a lady whohas a smallholding who cheekily went to a scaffolding firm and asked if they had any damaged planks,they had but she was happy to pay them £50 Cash and got 30 and I believe she said they were 4m long but some needed to be cut. If you have any construction projects in the area ask if they have any discarded shuttering timbers/sheets, half the time they skip them! Just a thought, you will be suprised at what is out there. Hi, i make mayo as follows: 1 egg, 1 teaspoon strong mustard (dyon). Take a fork an gently turn it together, very slowly. Put in the oil bit by bit and keep slowley turning the fork. When you have enough mayo put a teaspoon vinegar in. Or more if you like that. Maybe some salt if you like that. And some pepper if you like that. Sometimes i wil not come together. Than maybe the oil is to warm, or the vinigar or the egg. But there are many ways to make mayo!🙃 This is the way my french mother in law taught me a long time ago. I love your channel!

Clarissa, the mayonnaise - you need to add the oil VERY slowly at the beginning, just a drizzle so that the emulsifier in the egg can hold onto the oil. The first addition you did was too fast! Then as it thickens, you can add a little faster. Did you add powdered mustard (I couldn’t see!) as this acts as an emulsifier as well. Good luck with the next batch.

That potato salad looked SO good! My mother-in-law always told me that the ingredients fot mayonnaise should be at the same temperature, even leave them in the mixing glass for 20 minutes before mixing them. Your cold oil might just be the problem. And not too much vinegar. I love your channel.

I add the lemon juice after the mayonaise has emulsionated. In spanish we say "para que no se corte" ... so it doesn't get cut. I dont add vinegar but i do put in a garlic clove.
A less fatiguing way, to prepare new beds, is to Cover area with compostable cardboard, newspapers, or the like. Then cover It with mulch or Compost. And that’s it!

Question: Are you interested in sharing the realities of living with a bucket toilet? I lived off-grid for 10 years in a small cabin without any form of electricity or running water. We now live with an off-grid solar system and generator backup (we live in northeastern US where we have low light conditions for 2-3 months of the year) with most of the comforts including an indoor flush. However, we still keep our outhouse with a composting toilet using the Humanure method along with a separate compost bin for that waste which, once broken down, is good for non-edible plants (and edible plants, but somehow we haven't made that leap!)
Watching in complete jealously as I shovel our first snow storm in Reno, Nevada, as you work your garden in a t shirt! The woven fencing is hard work, but a good call, I tried that here years ago and the stakes I used were willow, and grew!! Created quite a mess digging them out😂. Beautiful video share! Thank you!

My wife does hers in Buckets of various kinds , about 20 of them is enough to keep us supplied all year round , tomatoes are easy as are her cucumbers , her biggest nemesis are carrots , she can grow them but they always come out distorted or small , Cabbages and Chard and spouts again grow well here on the UK white cabbage butterflies are the killer of most crop so keep them well covered

Thank you for your beautiful video again. I really envy you because here in Finland the gardening sesson is so short. Right now we have lots of know and it is freezing cold, about -30 °. Fortunately you got at least some potatoes. They need fertlizers. We use manure mostly. I wouldn't grow them in buckets because then they need more looking after. To keep the soil moist and to keep the weeds away, I add grass clippings and leaves. I also cover the footpaths in the garden with then to avoid weeds. Good luck to your garden!👍
I make instant mayo from a John Torrode recipe. His was a herb mayo - delight. I use 1 whole egg, 2 reaspoons French mustard, 1 teaspoon white wine vinegar, 250ml rape seed oil or other light oil. Iblitz then add a little more oil to adjust consistency.

Here's an idea: a few of you permaculture-oriented youtubers in Portugal set up a go-fund me to fly him down, say in early spring when things kick off in Portugal but not yet in UK, to check out your gardens. In the future I see a British cottage garden with small winding paths and places to chill out where there are small Japanese maple trees and dry stone walls. But that's a lot of work.😊

When peeling your hard boiled eggs, let them cool, crack the shell all around and use a teaspoon between the shell and the egg. It makes it so much easier and you get all the egg. Your salad looks yummy and I'm so impressed with your mayo making. I'm learning along with you, your tips are so helpful. I wish I had paid more attention to my mum. She was a great cook and gardener.

I'd love to do it but unfortunately I haven't any grass were my raised beds are so just railway sleepers for me. When you see it done it's fantastic. I watch Huw as well
Hey, regarding the mayo, this is how I do it and it turns out perfect every time: 1 or 2 eggs in the tall recipient, 1 teaspoon mustard, a bit of vinegar or lemon juice, salt, pepper. Then I add oil so that it is double the volume of the previous ingredients. It is easy to see, since oil floats. Then I put the blender in slowly, turned off. And start it fixed to the bottom on max speed, very important to be max speed. Then keep the mixer at the bottom of the jar for 5 seconds and then start to go slowly up and down with it. This will ensure that the oil is added slowly. When it starts to look like a mayo you can move it up and down more vigorously. If it is still too soft, add more oil. If it is too stiff, you can add some sparkling water. I have a short somewhere on my channel with the mayo process. You can also replace the egg, if for example it is summer and you feel funny about eating raw egg, and use milk instead. So the same process, just using milk. And a vegan option is to replace the egg with aquafaba, which is the liquid left after cooking chickpeas. It will work fine too. All these have variations in taste, but they are good.

It might be worthwhile for you to plant a willow somewhere, which you can coppice in future to create willow fencing which i have seen in a number of UTubes about regenerative farming. They require a degree of maintenance but look wonderful, and can be used for basket and furniture making which should appeal to your artistic soul....

I just love this video, following you along as you do the everyday activities of your homestead! I especially loved your woven raised garden bed which though it took a lot of work, gathering, trimming and weaving the branches, was made from the materials of the things around you and therefore free. The peaceful picture of Diogo and Albi sleeping on the cardboard while you worked on the walls of the raised bed was so sweet! As always your choice of music is superb, so relaxing! Thank you!

Hi, great looking turnip. I just wanted to share a family recipe as I am asked to make it every Thanksgiving. Carrots and Turnips, I am sure you can find many recipes, skin carrots, and turnips cut into 1 inch cubes boil till soft , drain, then smash add salt , brown sugar and enjoy 😋 it's like making mashed potatoes.
Well done with the wattle border. I have seen a lot of people who have been very resourceful in making raised beds here are a few ideas that you might want to bear in mind when you are out and about. Damaged Truck and Tractor Tyres (If they are no good for retreading the tyre fitting stations would love to get rid of them as opposed to paying for removal). Old Pallets cut down and patched, Old stone sinks, Damaged galvanised feeding and watering troughs. Old concrete posts (Stacked). Small tree trunks, old roofing/siding sheets. Scrapped washing machine and Tumble drier drums. I know of a lady whohas a smallholding who cheekily went to a scaffolding firm and asked if they had any damaged planks,they had but she was happy to pay them £50 Cash and got 30 and I believe she said they were 4m long but some needed to be cut. If you have any construction projects in the area ask if they have any discarded shuttering timbers/sheets, half the time they skip them! Just a thought, you will be suprised at what is out there. Hi, i make mayo as follows: 1 egg, 1 teaspoon strong mustard (dyon). Take a fork an gently turn it together, very slowly. Put in the oil bit by bit and keep slowley turning the fork. When you have enough mayo put a teaspoon vinegar in. Or more if you like that. Maybe some salt if you like that. And some pepper if you like that. Sometimes i wil not come together. Than maybe the oil is to warm, or the vinigar or the egg. But there are many ways to make mayo!🙃 This is the way my french mother in law taught me a long time ago. I love your channel!
Your home is looking amazing and the hard work you have put in is clearly evident in the progress you both have achieved. Love watching your videos. Clarissa, the mayonnaise - you need to add the oil VERY slowly at the beginning, just a drizzle so that the emulsifier in the egg can hold onto the oil. The first addition you did was too fast! Then as it thickens, you can add a little faster. Did you add powdered mustard (I couldn’t see!) as this acts as an emulsifier as well. Good luck with the next batch.

That potato salad looked SO good! My mother-in-law always told me that the ingredients fot mayonnaise should be at the same temperature, even leave them in the mixing glass for 20 minutes before mixing them. Your cold oil might just be the problem. And not too much vinegar.

I add the lemon juice after the mayonaise has emulsionated. In spanish we say "para que no se corte" ... so it doesn't get cut. I dont add vinegar but i do put in a garlic clove.

A less fatiguing way, to prepare new beds, is to
Cover area with compostable cardboard, newspapers, or the like. Then cover
It with mulch or
Compost. And that’s it!
It’s a great method but you need the compost.. which is either expensive or time consuming and we haven’t managed to produce enough yet unfortunately.
Someone please gift this wonderful couple powered secateurs - I can’t think of anyone who could do you a better review of the many ways using them for pruning then making brilliant use of the prunings to edge her veggie beds - or Foggies set up an Amazon wish list so we can gift things like this ? Love that you priced then discarded wooden boarding edges - fab example of making great use of what you have on the land already and great hurdles as a result
Double dig, also any path that you make take the top soil out for a nearby bed first. Don't worry to much about the "rules" experiment.

Question: Are you interested in sharing the realities of living with a bucket toilet? I lived off-grid for 10 years in a small cabin without any form of electricity or running water. We now live with an off-grid solar system and generator backup (we live in northeastern US where we have low light conditions for 2-3 months of the year) with most of the comforts including an indoor flush. However, we still keep our outhouse with a composting toilet using the Humanure method along with a separate compost bin for that waste which, once broken down, is good for non-edible plants (and edible plants, but somehow we haven't made that leap!)
Watching in complete jealously as I shovel our first snow storm in Reno, Nevada, as you work your garden in a t shirt! The woven fencing is hard work, but a good call, I tried that here years ago and the stakes I used were willow, and grew!! Created quite a mess digging them out😂. Beautiful video share! Thank you!

My wife does hers in Buckets of various kinds , about 20 of them is enough to keep us supplied all year round , tomatoes are easy as are her cucumbers , her biggest nemesis are carrots , she can grow them but they always come out distorted or small , Cabbages and Chard and spouts again grow well here on the UK white cabbage butterflies are the killer of most crop so keep them well covered

Thank you for your beautiful video again. I really envy you because here in Finland the gardening sesson is so short. Right now we have lots of know and it is freezing cold, about -30 °.
Fortunately you got at least some potatoes. They need fertlizers. We use manure mostly. I wouldn't grow them in buckets because then they need more looking after. To keep the soil moist and to keep the weeds away, I add grass clippings and leaves. I also cover the footpaths in the garden with then to avoid weeds. Good luck to your garden!👍

I make instant mayo from a John Torrode recipe. His was a herb mayo - delight. I use 1 whole egg, 2 reaspoons French mustard, 1 teaspoon white wine vinegar, 250ml rape seed oil or other light oil. Iblitz then add a little more oil to adjust consistency.

Here's an idea: a few of you permaculture-oriented youtubers in Portugal set up a go-fund me to fly him down, say in early spring when things kick off in Portugal but not yet in UK, to check out your gardens. It could be a mutual learning experience and "cross-fertilize" your communities. Of course, only if he'd be interested in the trip. I'd contribute for sure to see the resulting videos in the future!

When peeling your hard boiled eggs, let them cool, crack the shell all around and use a teaspoon between the shell and the egg. It makes it so much easier and you get all the egg. Your salad looks yummy and I'm so impressed with your mayo making. I'm learning along with you, your tips are so helpful. I wish I had paid more attention to my mum. She was a great cook and gardener.

I was watching a utube channel Emma's allotment diaries and she was saying she was thinking of doing the same because she has a mountain of branches. I'd love to do it but unfortunately I haven't any grass were my raised beds are so just railway sleepers for me. When you see it done it's fantastic.

Hey, regarding the mayo, this is how I do it and it turns out perfect every time: 1 or 2 eggs in the tall recipient, 1 teaspoon mustard, a bit of vinegar or lemon juice, salt, pepper. Then I add oil so that it is double the volume of the previous ingredients. It is easy to see, since oil floats. Then I put the blender in slowly, turned off. And start it fixed to the bottom on max speed, very important to be max speed. Then keep the mixer at the bottom of the jar for 5 seconds and then start to go slowly up and down with it. This will ensure that the oil is added slowly. When it starts to look like a mayo you can move it up and down more vigorously. If it is still too soft, add more oil. If it is too stiff, you can add some sparkling water. I have a short somewhere on my channel with the mayo process. You can also replace the egg, if for example it is summer and you feel funny about eating raw egg, and use milk instead. So the same process, just using milk. And a vegan option is to replace the egg with aquafaba, which is the liquid left after cooking chickpeas. It will work fine too. All these have variations in taste, but they are good.

It might be worthwhile for you to plant a willow somewhere, which you can coppice in future to create willow fencing which i have seen in a number of UTubes about regenerative farming. They require a degree of maintenance but look wonderful, and can be used for basket and furniture making which should appeal to your artistic soul....
