  • Welcome back to my channel!
    I've got the opportunity to work together with a local butcher who is selling premium meat. And what do you need when selling the best of the best meat? A proper knife of course!
    Thats why I made a Fillet Knife as well as a Carving knife ( stay tuned for this video).
    I've never made a knife like this before, but it was a lot of fun and I really like how it came out! What do you think?

    About me: My name is Tim and I'm a 21 year old student. I got into knifemaking about two years ago, by watching videos similar to this one. Over the years, I gained some knowledge and last year I built this belt grinder to finally make my own knives. I do sell custom orders, mostly of kitchen knives, if you're interested, follow me on Instagram. My goal is to make inspirational and educating, as well as entertaining videos. I gained almost all my knowledge by watching TH-cam ideos, so now I want to give something back.     All my builds and machines are low cost but good quality. I’m a beginner as well as a student on University, so I want to get the best tools for the least amount of money. If you are starting your new hobby, consider watching me setting up my little workshop.

    *I used this for the first time on 10 white perch **enjoyable.fishing** recommend it’s a 22” Striper. Passed right through with easy. Very comfortable handle!*

    Sehr cool, musste auch letzten eins machen für einen Koch. Meine größte Sorge war, es sollte ja gute Härte haben und trotzdem sehr flexibel sein. Bin dann auf 2mm C70 gegangen und das hat recht gut funktioniert... ich hab es auch auf 210° angelassen deshalb. Hab dich heute entdeckt hier, sehr coole videos und hab auch wieder was gelernt! :)

      Thank you! The customer actually wanted it to be a bit thicker and less flexible, good for me since this was my first fillet knife and I’ve been a bit scared :D

      Danke! Leider kommt einem das nur so vor, bei scotch-Brite Bändern ist er regelmäßig stehen geblieben... deshalb hab ich ihn jetzt nach langem Rumquälen endlich auf einen 2,2 kW Motor aufgestockt und einen Frequenzumrichter verpasst:D ein Unterschied wie Tag und Nacht!

    I have a stupid question.
    When quenching stainless we are supposed to put the blade that’s wrapped iin stainless foil in between two aluminum plates then blow compressed air at it. In other words were quenching the entire knife, not just the blade and part of the handle.

    But when we quench high carbon steel we only get the blade and part of the handle red hot then dip it in the oil. Why don’t we just make the whole knife red hot and just drop it in parks 50?

    Great vlog, thanks for sharing. Great knife you made. But, I got to admire the great little shop yo have near the walled ivy. That tempering at night is just far out, killer, etc! Just one suggestion, after you sharpen the blade, tape it real good to prevent the sale of stitches, band-aids, etc., etc. I see you did in some of the vlog. But until you complete the blade I’d keep it wrapped until finished. Just my my .02 cents.

      Danke! Ich arbeite viel mit dem 1.2824, den kaufe ich präzisionsgeschliffen von einem Stahlhändler bei mir in der Nähe. Stauber Stahl heißen die, die liefern auch und haben eine Hammer Auswahl zu super Preisen!

    I noticed you turned the knife over to taper the spine. Do you find that to be a better method? Getting ready to make my first fillet knife. Nice work BTW.

      I usually grind with the cutting edge facing up but I’ve also tried it the other way around. I cannot tell you what the right way to do it is, I‘d recommend to just try out different methods and find the one you like the most. Have fun and good luck!

    Beautiful work. What was the thickness of the o2 ? And did you taper from the handle to the tip of the blade?

      Thank you! I started with 3.4 mm and tapered from the beginning of the handle to the tip of the blade continuosly.

      I started with 3mm material but ground most of it off. I guess 2mm would be enough as well👍🏼

    first off,great looking knife.i was just wondering after you did your quench did you temper the knife at all?
    or because you used o2 do you not need to?thanks again for the video.

      Thanks! I tempered it, should’ve mentioned it in the video as well. I went for 200 C for 2x2 hours with this knife, with normal chef knives I would choose 180 C 👍🏼

      Well I can’t help you with that since I’m from Germany :D
      I get all my basic steels like O1 from local suppliers, for exotic steels I like to order from gfs-knifesupplies from England

    Hi! Auf welcher Temperatur hast du den 1.2842 angelassen um auf Federhärte zu kommen? Ging das im Backofen?😄
