    Well done mate. Fantastic. I never heard of eating cheese with Christmas cake, but i am going to try it.
    I would like to say how much I have enjoyed your episodes this year. You speak to everyone not down on them. (Remember Fanny Craddock) Its a pleasure to tune in and see what your up to. I for one have tried and liked many of your recipes. Thanks very much Rik. Have a good Christmas.

      Very popular here in Yorkshire, Wendsleydale cheese is a popular one in Yorkshire to have with Xmas cake 😀

    I love the Christmas cake and then in this video watching you finish the decorations. But for me the best part of the decorations, were Father Christmas' footprints in the "snow"! 💜💜💜🎅❄☃️

      @@maureensamson4863 I make various things, chutneys and relishes, jam, curries and often give some to friends too. Including excess produce to give away from my allotment .
      This next year i plan to give away the excess to families of a local primary school at the end of me road where i live 😁

    I made the cake a couple of weeks ago " fed the cake" made maripan, ( but bought the icing😢😢)
    Taking to a xmas party today.If it tastes as good as it look.
    Ill be a happy guy and so will the party guests🎉🎉❤❤

    That looks great Rik, all your hard work coming together and producing a really well made cake. Save us a bit as we’re driving up to chiang mai in a week or so for new year, wife wants to go up doi internon to experience the cold weather up there again. Thanks for all of the great recipes and entertainment you’ve given us over the past year.       @@BackyardChef hey Rik, don’t do Christmas? As you know, we live in the south of Thailand and although the Thais don’t celebrate, it doesn’t stop us from doing it as a family. Even my wife enjoys celebrating Christmas Day, she and our son like the Christmas dinner I make yearly. Here in pratchuap weather is a cool 22 degrees right now, wife is freezing - typical Thai :) take care and stay healthy :)

    ADORABLE ADORABLE!! Delicious boozy Christmas cake!! Lovely. Beautiful cake and I love the snow prints!! So I did not know you had two layers - one with Marzipan and one with Fondant. So you do not eat the fondant? Beautiful. Merry Christmas. I hope 2024 will be better then the insane 2023 year has been. Blessings.

    Amazing cake well done! My cake is 4 weeks old and fed it once a week. How many days befote applying the marzipan i should stop feeding it? Also after i put marzipan you recommended to leave it uncovered? Can i put it uncovered into an air tight container? Or uncovered in a corner in my kitchen? I plan to serve my cake Christmas day or Eve ❤🎄

    My cakes are about 6 weeks old now….and I put bourbon on them every 7 days. I actually made two 9” layer cakes…and hope to put marzipan in the middle as well as top/sides. Can you tell me when I should put on the marzipan if I want to serve it Christmas Eve??? Thank you!!

      To serve your cake on Christmas Eve, marzipan it about 7 to 10 days in advance, ideally between December 14th and December 17th. This allows the marzipan to dry and firm up slightly before you apply the final layer of icing or decoration.
      Preparation: Before applying marzipan, make sure your cake has had time to mature and is well-fed with alcohol (if applicable). Brush the cake with a thin layer of warmed apricot jam to help the marzipan stick.
      After Marzipaning: Let the marzipaned cake sit uncovered (or lightly covered with parchment paper) in a cool, dry place for at least a few days before adding the icing. This prevents moisture from the marzipan affecting the icing layer.
      Icing: Ice the cake (royal icing or fondant) about 5 to 7 days before Christmas Eve (around December 17th-19th), giving it enough time to set but staying fresh for the occasion. Hope this helps. Thank You. Best, Rik
