Trifle an English Classic recipe - Nostalgia at its BEST!

  • Today, Here is an English classic recipe for a trifle using Swiss roll, sherry, tinned fruit, jelly, custard, and whipping cream. You can use any tinned or fresh fruit if you wish. This is a normal, easy recipe to make with the kids or even big kids - no messing about with egg yolks and vanilla bean pods for custard - bog-standard at-home delicious trifle for any occasion.

    - 1 large Swiss roll
    - 100ml sherry
    - 1 tin of fruit cocktail (or your preferred tinned fruit), drained
    - 135g packet of jelly (strawberry or raspberry works well)
    - 500ml fresh custard (store-bought or homemade)
    - 300ml whipping cream
    - Grated chocolate or sprinkles for garnish

    Family legend has it that the first time my mother made a trifle, people kept coming back for more: she'd used guesswork with the amount of sherry she added. At least two cups worth.

    Just like my mam used to make when I was young. Difference was that we used to have a decent layer of Harvey’s Bristol cream sherry in there, not just a dash. Best bit of the trifle especially when the sherry soaked sponge mixed with the cream ;)

    Yum Rik, I love trifle. Every time we all get together, before I have chance to ask them what to bring my family all five on me and say can you please do trifle Mum, and make it like Grandma’s trifle. I’ve seen many different recipes over here in Australia for some beautiful looking trifle but they all say, no, it has to be like Grandma’s, lol. So that’s what I do each time. The only thing different to yours is I don’t put alcohol in cos of all my grandkids but it still tastes great anyway. Thanks for your video Rik.

    I like either canned pineapple or canned peaches better than the fruit cocktail, and I use the fruit juice instead of water for the gelatin.
    For Washington’s Birthday, I make an all-cherry trifle, with cherry gelatin, canned sweet cherries, cherry jelly roll, and glacéd cherries on top. Yum!

    👍🏻 Bless you, Rik, for bringing back memories of Christmas with my Mom! I always thought she made it up as she went, but she must've been following the same recipe. Only difference is that she also used glaced cherries that she first soaked in almond essence.

    Yum, Almost just how mom used to make it except she always used the juice from the tin in the jelly instead of cold water

    JELLIE!!? Raspberry jam on sponge layers, sherry, Bryd's custard, and topped off with whipped cream, cherries. Some things are worth the effort.

    So happy! This is exactly what I do every Christmas, Easter and special occasions! Learnt for my gorgeous late mum, no other trifle beats this!! So easy but so awesome! x

    I have to say the custard is very anaemic looking I feel I would need to add maybe some caramel colouring. Love a trifle to have after my tummy is already stuffed to explosion point! Thanks Ric

      Chris, the sherry is in Rimping defo at the Airport branch (Nim City). There are 3 or 4 different ones, not cheap, all around 1k baht, mate. Best, Rik
