South Indian Eggplant Curry

- South Indian eggplant curry is easy to make vegan curry, full of amazing flavors! It has intense smoky flavors from eggplants roasted in pan.
Prep Time: 10 minutes
Cook Time: 45 minutes
Servings: 4 servings
Ingredients List:
1 lb eggplant (brinjal or aubergine) (400 grams)
¼ teaspoon turmeric powder
1 teaspoon Kosher salt
2 tablespoon vegetable oil (canola oil)
Curry Sauce-
1 tablespoon vegetable oil (canola oil)
1 onion, thinly sliced
½ cup tomato pulp (or tomato passata)
1 serrano peppers (optional), use with seeds if you want extra heat
1 tablespoon ginger, minced
1 tablespoon garlic, minced fine
1 sprig curry leaves
1 cup water (plus extra as needed)
Kosher salt to taste
¼ cup coconut milk, thick full cream
Spice Powders -
¼ teaspoon turmeric powder
½ teaspoon of chili powder (cayenne pepper) - use more if you like to increase heat
2 teaspoon cumin powder
3 teaspoon coriander powder

@@JyothiRajesh I actually made it for dinner earlier. It was sooo good! I’m still in shock that it came out so delicious. The only thing that I did different was that I added a tablespoon of hot mixed pickle because I’m obsessed with it lol and a teaspoon of amchoor powder oh and I doubled the recipe so that I can have enough leftovers for tomorrow’s lunch. I’m so glad that I made extra because it was a huge hit.

We cooked this tonight and quite enjoyed it. We had it with whole wheat naan and some dal. IMO the serving size is more like three servings, so if you're going to make this for four servings, I would advise doing 1.5 the amount of everything. I would also suggest that you consider adding a little additional oil each time you sauté a new batch of eggplants. Eggplant has a tendency to soak up oil and even with a ceramic cast-iron pan you might find your eggplants sticking to the bottom of the pan if there is not sufficient oil in the pan.

This looks very good! I like the idea of roasting the eggplant before making the sauce and simmering the eggplant for 20+ minutes to bring it all together. There seems to be enough sauce, too, although I might add prawns or chicken and adjust the liquids accordingly. Thank you!

I did not see any Garam Masala ?
Hope it will still give the right taste without it ..?
We south Indians dont't use Garam masala normally for south indian curries.
I tried with garam masala… it was good..
Garam masala contains cumin powder and some additional spices..
