Ingredients:
One cup (200 grams) red lentils
Two eggplants (600 grams)
Two potatoes (500 grams)
Olive oil
Salt
Black pepper
Chili powder
Garlic powder
Vegetable oil
One onion (250 grams), chopped
Five cloves of garlic, grated
One tbsp cumin
One tbsp coriander
One tbsp chili powder or paprika
One tsp black pepper
One tsp turmeric
Hot water
Two tbsp tomato paste (40 grams)
Three tomatoes (350 grams)
Hot pepper (optional)
Chopped coriander
Two tbsp butter (30 grams)
One tsp chili powder or paprika
Serve with bread or rice.
Wash one cup (200 grams) of red lentils and soak for 30 minutes.
Cut two eggplants (600 grams) and two potatoes (500 grams) into cubes.
Place the eggplant and potato cubes on a baking pan with parchment paper.
Drizzle olive oil and season with salt, black pepper, chili powder, and garlic powder.
Bake at 400°F (200°C) for 30 minutes.
In a pot or wok, sauté 250 grams of chopped onion and five cloves of grated garlic.
Season with cumin, coriander, chili powder, black pepper, and turmeric.
Add hot water, tomato paste (40 grams), three tomatoes (350 grams), and optional hot pepper.
Add the soaked lentils and cover with four cups of hot water.
Cook over medium heat for 30 minutes.
Add the baked eggplant and potatoes, and one more cup of hot water.
Cook for 10 minutes, then add chopped coriander.
In a small pan, melt two tbsps of butter (30 grams) with one tsp of chili powder or paprika.
Pour the butter mixture over the lentils and garnish with coriander.
Serve with bread or rice. Enjoy!
المكونات:
كوب واحد (200 جرام) من العدس الأحمر
حبتان باذنجان (600 جرام).
حبتان من البطاطس (500 جرام)
زيت الزيتون
ملح
فلفل اسود
مسحوق شطة
مسحوق الثوم
زيت نباتي
بصلة واحدة (250 جرام) مفرومة
خمس فصوص ثوم مبشورة
ملعقة كبيرة كمون
ملعقة كبيرة كزبرة
ملعقة كبيرة من مسحوق الفلفل الحار أو الفلفل الحلو
ملعقة صغيرة فلفل أسود
ملعقة صغيرة كركم
ماء ساخن
ملعقتان كبيرتان معجون طماطم (40 جرام).
ثلاث حبات طماطم (350 جرام).
فلفل حار (اختياري)
كزبرة مفرومة
ملعقتان كبيرتان زبدة (30 جرام).
ملعقة صغيرة من مسحوق الفلفل الحار أو الفلفل الحلو
تقدم مع الخبز أو الارز
اغسل كوبًا واحدًا (200 جرام) من العدس الأحمر وانقعه لمدة 30 دقيقة.
قطّع حبتين من الباذنجان (600 جرام) وبطاطس (500 جرام) إلى مكعبات.
ضع مكعبات الباذنجان والبطاطس على صينية للخبز مع ورق الزبدة.
يرش زيت الزيتون ويتبل بالملح والفلفل الأسود ومسحوق الفلفل الحار ومسحوق الثوم.
نشوي الباذنجان والبطاطس في درجة حرارة 400 فهرنهايت (200 درجة مئوية) لمدة 30 دقيقة.
في قدر أو مقلاة ، اقلي 250 جرام من البصل المفروم وخمسة فصوص من الثوم المبشور.
يتبل بالكمون والكزبرة ومسحوق الفلفل الحار والفلفل الأسود والكركم.
أضف الماء الساخن ومعجون الطماطم (40 جرام) وثلاث طماطم (350 جرام) والفلفل الحار اختياري.
يضاف العدس المنقوع ويغطى بأربعة أكواب من الماء الساخن.
يُطهى على نار متوسطة لمدة 30 دقيقة.
أضف الباذنجان المخبوز والبطاطس وكوبًا آخر من الماء الساخن.
يُطهى لمدة 10 دقائق ، ثم يُضاف الكزبرة المفرومة.
في مقلاة صغيرة ، ذوب ملعقتين كبيرتين من الزبدة (30 جرام) مع ملعقة صغيرة من مسحوق الفلفل الحار أو الفلفل الحلو.
يُسكب مزيج الزبدة فوق العدس ويُزين بالكزبرة.
تقدم مع الخبز أو الأرز. يتمتع!

@@dede.terrebonneterrebonne9914 I agree with the first statement, about the dish looking delicious. however about budget friendly, I have strong doubts. At least, where I live, tomatoes cost same as meat, sometimes more Depends on the quality of meat and of tomatoes.(they only go down in price during a couple of summer months). Eggplants are a little cheaper than meat, but still...a tiny can of tomato paste would cost me minimum around 1 USD. The butter is the most expensive part of it- she adds 3 tbsp (45-50 gr roughly) which makes at least 1 USD. The spices are quite expensive as well as olive oil. The most affordable part are potatoes, which are
2 kg / 1 usd.
Probably I would need to wait till summer, when there is abundance of eggplants and tomatoes at more affordable prices (hope the price of butter would not rocket till then)

Mmmmmmm - I have just eaten this and it is bliss. And I am not a veggie.
WhenI I cook this again, I will use more aubergine. Do not worry about what lentil/pulse/dahl you use - it worked OK here with whole brown lentils. I can see this working with channa/chickpeas.
Try with well-toasted pittas rather than rice.
A fabulous meal.
for the lentils to melt into a sauce: only red lentils will achieve this.
Good tip! Otherwise, I would have just used some brown lentils that I have in the kitchen. @@GuyCruls
Also there are other recipes with above mentioned pulse products, so better stick with the recipe. @@simonledoux8519
@@GuyCrulsreally has a point there! split red lentils soak and cook fast, ad become melty and creamy smooth. whole brown lentils are more hearty, but take longer to soak and cook. ...and chickpeas, as much as i love them, take 3-4 hours of cooking until tender, unless you're rocking a 1.4bar / 20PSI pressure cooker, that does the job in 40 minutes at about 140°C boiling temperature. (after soaking at least 12 hours)
Yes true! I used yellow lentils as that’s all I had. I pre soaked them before cooking but even after cooking, they still had their shape even-though it was tender.

I cooked this tonight and it is yummy! So good. I like that roasting the spiced vegetables means they don't dissolve into the lentils. I went a little light on the spices since, as much as I love spicy food, it's hard on my digestion. I made a big batch so I will be freezing half for future meals. It is my first Yemeni dish and I will be trying more of your recipes. I especially want to try the breads and all the vegetarian dishes.

The lentils are exactly spiced and cooked how we make it in jhelum Punjab Pakistan 🇵🇰..however, the addition of eggplant and potatoes is something new...i must try it...i can only imagine the wonderful flavours and textures...pretty awesome with garlic bread❤
i love the idea. it adds more to the dish and fills you up. very good fillers. i wouldnt mind trying with zucchini too.

Just made it now. This is truly delicious! Although the spices are the basis for a curry, this does not taste at all like a curry. Very tasty, very fresh and very light on the stomach - I feel full but not heavy. In my version I added 50g more of lentils, and 100g less of eggplant/aubergine. Absolutely possible to add meat to this - beef, lamb, chicken. With what was left over I added some cubes of previously cooked roast beef. Works very well. Thank you for this! Now a staple add-on to my list of good recipes.

Some years ago while on holiday in Eilat in Israel I used to love eating at a Yemeni restaurant called The Yemenite. It served some of the most delicious food I have ever eaten.

First time tried a Yemeni dish and I must say that it’s indeed a different dish that I’ve never tasted before. The whole combination of potato, lentils and eggplant really intrigued me so I knew I had to try it. Absolutely complimented with rice 😊
Ps: I air fried the potatoes and eggplants at 200 degrees for 20 minutes. Also didn’t had tomatoes so used tomato paste only. Still worked great 😊 And finally, as some of the comments said, I wish I used more eggplants! 😅

It’s fusion cuisine and you are so right, why not add a few lentils to the eggplant curry? They are delicious and nutritious, as well as dead easy to make.
