    Just subscribed to your channel 😁 I recently converted to eating healthy due to health issues. I recall when I was young in the early 80s. I had the best time visiting Greece and the beautiful islands. For the entire month I spent in Greece, it was the healthiest I’ve ever eaten. Fast forward 40 years, I am ready to start eating healthy again and your channel will help me prepare great dishes to enjoy and keep healthy 😊🙏

    I just made your hummus and I swear it’s the best hummus I’ve ever eaten although I live in a Mediterranean country where I’ve been eating all kind of hummus since forever! Because of quarantine I couldn’t get my hummus from the falafel restaurants so I had to make it at home! And God I’m never gonna buy it from restaurants ever again!       The Mediterranean Dish phenomenal! I had it with some pita chips. I separated pita bread to make it 2 thin halves, then cut those up with a pizza-cutter into triangles. Drizzled olive oil, sprinkled Himalayan pink salt & popped them in the oven for a few minutes. It was so damn good!

    Agree with skinning the chickpeas, it makes a huge difference. I like to add a little cumin to mine. Also (and I know this is sacrilege) if I don't have any tahini on hand, I'll add a spoonful of peanut butter - it will do in a pinch.

      She said it's better if you make the chickpeas, but you can use canned. You still need to peel the skins off.

      If using dried chickpeas, soak chickpeas in plenty of water overnight (water needs to be at least doubled the volume of chickpeas). When ready, drain chickpeas and place them in a medium-sized heavy cooking pot. Cover with water by about 2 inches. Bring to a boil, then reduce heat and simmer for 1 1/2 to 2 hours. With canned chickpeas, you only have to drain and rinse.

    I never remove skin and I use a Brevell Fast & Furious Blender,, ultra silky smooth everytime, same w/my daily smoothies. Food processors are terrible for making hummus.

      I guess it depends on who you ask. In my opinion it is absolutely necessary and wouldn’t be hummus without it. But there are plenty of recipes without tahini that you can try. Good luck!

    Loved the ice trick; wish you'd shown the step of de-skinning chickpeas though. BTW: using "y'all" in all your videos is something you should reconsider for marketability; many in the US associate it with lack of education, though I know (I'm an English Prof) that assumption is inaccurate--it's simply dialect (used in some southern regions of the US) not adopted in most states.
