I noticed you used mini sized chips on one and regular size chips on the other. If I remember correctly the chips are waxed or coated with something to keep them separated and from melting together. Might be the issue?
I've made fudge like this except I had to make the sweetened condensed milk using splenda first because my son and I are type 2 diabetic. Oh used sugar free chocolate chips as well. Turned out great.

It is possible that they aren’t microwaving long enough. It depends on the watts of the microwave. Making sure mixing the fudge well between microwaving.
How did I miss those gnome mixing bowls? I looked them up online and found some on ebay. Good thing my husband was hinting at what I wanted for Christmas!!! Thanks!!!

Depends on where the milk comes from. Like hersheys chocolate. They have to get milk from certain area or chocolate not same. They tried getting milk from other parts of country and it changed taste. I assume same what u feed cows influences taste of milk.
It might have the aftertaste because you didn’t wash the bowl when you made the eagle brand. There was left over chocolate in there that had already been microwaved

I personally bake alot and make alot of no bake cheesecakes and I've tasted them side by side w/o being in the recipe and the Kroger brand and the EAGLE brand tastes way better. Same w Cream cheese. I tried 3 different ones and Philly is the best, texture-wise too and taste. ❤❤❤
Age changes sweetened condensed milk. It goes thicker and darker, and develops an odd flavor that, to me, reminds me of the adhesive on bandaids. lol But both cans (not the dented one) looked fresh.
I've made several batches of fudge using this recipe in the same day but using different flavors of chocolate and some set up perfectly and some were very soft and didn't set up well at all. It may be the chocolate even though it's solid before adding the milk it may be to much for some flavors or types. Even the gooey fudge still tastes good though 😂

It's darker only because a little bit longer than the other one. If you cook the sweentned Condenced milk for a while long you will have Caramel instead of Milk
milk can taste slightly different, I assume because of what the cows may eat and their water supply. So it would make sense that the milk may taste slightly different....not bad, just different
Grandma, Mom, and I have always pre-cooked the Eagle Brand in water in the original can. That's why they have that little blowout disk on the end so if it start bubbling (boiling) in too hot of water the milk can won't expand and not blow up the can like a pressure cooker and burn somebody. I usually cook (simmer not boiling water) three or four cans at a time on a slow simmer for 3-4-5 hours depending on how thick and dark you want it. Then when you mix it with the sugar free (Baker's) Chocolate or bitter (semi) sweet (Baker's) chocolate chips (or squares). I also like using the (Baker's) chocolate "squares" and use the identical (same package)so the batches taste exactly the same and bake it on parchment paper. If you want to be a little creative with the taste, you can add in Carnation Instant powdered vanilla malted milk (the chocolate flavored one is way too sweet) One admonition; caveat, you need to "cook" the sweetened condensed milk in plain water, no adding salt to the water to raise the temp and no pressure cooker to raise the temp. You boil it you will blow up the can! Since we are now all using the microwave for most of our cooking/baking don't forget no metal in the microwave!!!) And remember that especiallymilk has the affinity of taste different in stainless steel aluminum, crockery, and/or cast iron. Keep the brownie mixture from unwrapped fruits and vegetables in the fridge. Also make sure that you have clean ice cubes in the fridge as they can also absorb fridge odors and transfer those odors to the brownie mix. Don't put hot brownie mix in the fridge, cool the mix on the table until it comes to room temperature, and then put it into the fridge to firm it up. Cheers! Raymond
Taking a wild stab at why there might be an aftertaste with the eagle brand....from what I could see, it LOOKED like the Walmart batch was in a sprayed stainless 8x8 pan, sprayed of course with the same spray as the other. The Eaglle brand looked to be in an aluminum 8x8 pan. Could the oil spray possibly be reacting with the spray, causing an aftertaste? ( BTW, this is not a criticism of using aluminum. I have the same pan!) Edit...I mean the spray might react with the aluminum pan, not " the spray react with the spray" !! 😂
Just because they have the same ingredients DOES NOT mean they have the same amounts of same said ingredients. So maybe one has more sugar less of some other ingredient. Just a thought!!
The color and thickness of the sweetened condensed milk doesn’t matter… it’s change if the can aged! The difference is you mixed evaporated milk to condensed milk!
Maybe the people who said theirs didn't set up.....I know some people who have thought evaporated and condensed milk was the same thing. They are not label readers. It helps if all recipes said "sweetened condensed milk" instead of condensed milk". I am an older cook, so I know the difference, but younger cooks may not.

That after taste may have something to do with the spray you used in the pan before adding the fudge. I always used parchment paper to line my pan.
Also depends where in the fridge each pan was. The blower can make an odd aftertaste too.
She used the same spray for both batches of fudge so both batches would have the same aftertaste.

Check out the caregeenean that's in evaporated milk,plantbased milks,and alot of other foods.
There's no caregeenean in SWEETENED CONDENSED MILK.
It also could be that you used the same bowl without washing it (at least that was my impression.) I would've used a clean bowl. Just my 2 cents.

Wonder if Walmart brand was cooked longer before canning, probably why it had a darker color. Or they were cooked at different temperatures.

I've tried numerous store brand cream cheeses, only Philly tastes right in recipes and as a spread. My family knows right away if I use anything else.

We make dulce de leche/caramel from sweetened condensed milk and some brands turn out while others do not.
We cook the milk in the can with label removed in a large pot full of water.not sure if it's safe, so I can't recommend it to others, but it works.

True. The fudge recipe my family has made for decades uses evaporated milk, not sweetened condensed milk! It is more of an "old fashioned" fudge.
The cheap brand looks a little more runny - prob a smidge of water.
The Wal-Mart cream cheese is horrible. I will never again buy anything other than Philadelphia. The GV condensed milk to me was fine though.
