    I can't understand these New World Order measurements. Wish this was in English. You did manage to say something about a teaspoon, so why did you say 500 grams of sugar? Why not how many cups? Who TF cooks in grams?!

      I know this was 3 years ago but still. I think the complete opposite. It’s so annoying when I hear a teaspoon because I have absolutely no idea how much that is. I just grab a random spoon and use it hoping it’s somewhat similar to what a teaspoon is 😂

    HERE ARE THE US conversions
    2 cups brown sugar
    1 stick of butter
    1/2 cup of milk
    1 can (13 oz) of condensed milk
    Vanilla is the same

      The higher molasses count on dark brown sugar will make it great. I have always used molasses for my pancake syrup

    I made this fudge this week. Followed your recipe and it turned out amazing!
    My first time ever making caramel fudge.
    I honestly the the sugar measurement was wrong because it looked so much! haha but it turned out perfectly and tasted so good!

    If you want it to last outside the fridge just cook it for a bit longer, then when cooling and stirring it will rather quickly become the consistency of fudge, then pour into mold, refrigerate once and bag it up and mine keeps well in the cupboard. Pro tip is allow a tiny bit of burnt caramel towards the end then quickly mix it in with the rest well before removing from the heat, it adds something a little extra ;)

    Inadvertently got Condensed milk sent to me instead of evaporated, during Lockdown. Now I know what to do with that condensed milk.😍

      Put it in the crock pot with water just above it for about 6-8 hours and you get caramel sauce and I meant the sweetened condensed milk

    Hi. Here in Brazil we kow it as milk candy. Our grand grand mothers used to make candies using milk, butter and brown sugar . They had to cook for hours to get candies. Even nowadays we make milk candies almost the same way. but, of course, using condensed milk is easier. If you add grated coconut you get a coconut candy.

    Yum ! I really enjoy caramels and fudges, so this recipe is ideal. I might add a small amount of salt for salted caramel in some of the mixture 😋

    Made this yesterday and put in the fridge overnight to set. Got it out this morning and it’s like chewy caramel. It won’t cut up at all, just sticks to the knife.

      This is a bit late in the game... did you try using a sharp knife dipped in boiling water and dried before cutting? You might need to do it for each lengthwise cut, but that should do the trick!

    This looks really good. I'll have to try it. Only tip I have is that if you use vanilla extract add it after it is through cooking. Most of it will be burned off due to the alcohol in it if you don't.

    I followed it right to the letter and after being in the refrigerator is was crumbly....I set the timer for both the 15 and the 10 min stirrings. It is delicious but quite hard and crumbles early. What did I do wrong please?

    My mother used to make what was known as ‘Russian Caramel’ in the 1950’s with condensed milk. The recipe was in ‘The Modern Cookery Book’ which she’d had since the 1930’s. We loved it then and I still love it now!

    THIS! No candy thermometer needed, yay! Thank you for sharing this & God bless😇!
    VANILLA/CARAMEL FUDGE [American/Imperil conversions in brackets as best I can determine]
    - 150 gms unsalted butter --- [American measure: 1/3 lb butter, aka 1+1/3 stick of butter, aka 10 Tbsp + 2 tsp butter]
    - 500 gms brown sugar (@28g per ounce) --- [American measure: 18oz, aka 2+1/4 Cup brown sugar]
    - 125 ml milk --- [American measure: 4.23 fluid oz, aka ~1/2 Cup whole milk]
    - 395 gms sweetened condensed milk -- [one 14 oz can of sweetened condensed milk]
    - 1 tsp vanilla
    Combine in pan & STIR CONSTANTLY w/ heat-proof wisk, over MED heat approx 15 minutes (it will begin bubbling at some point... continue the full 15 min while stirring)
    TAKE IT OFF the HEAT after 15 min, then continue to stir another 10 minutes (to caramelize ingredients & firm up the fudge)
    Scrape into prepared pan (greased & parchment papered)
    Let cool & firm in fridge ~ 4 hours
    Remove & cut into squares (may need to keep in fridge to maintain form)

      Actually, it’s called Duce de Leche. Mexican. Means sweet milk. I grew up with kids of Mexican descent and was often treated to this straight up or the famous dulce de Le he cake which should be classified as a Sin.

      Actually you’re both wrong. Dulce de leche is milk caramel, which “can” be made by heating sweetened condensed milk till the sugars caramelise. It doesn’t set solid tho, which this does, due to the addition of extra sugar and butter. You could call it a dulce de leche fudge. And it’s Russian Fudge that it’s also known as, not toffee. This is in no way, anything like toffee.

    The way I do it buy 2 bags caramel chips put sweetened condensed milk in a double boiler met caramel completely spray baking dish with nonstick spray and pour into baking dish then refrigerate

    Best video I've watched for making fudge. No rolling boil & constant stirring while it thickens are the key to successful fudge. Other videos had pitted & crumbly fudge when cut ...
    To save time, I melted the butter first w/the milk - much quicker. My arthritic hands can't stir for long periods of time. I also grabbed one my kids to finish the last stage of stirring process ... 😆

    Could this work with swerve brown sugar and unsweetened condensed milk? I teach older folks with diabetes who crave sugar so I'm always looking for treat options

      A Google search said that there is no such thing as unsweetened condensed milk. It said that would be evaporated milk. I thought it was too good to be true. I like that you try to help older people find alternatives, though. :)

    Caramelize the condensed milk in advance and see if the preparation is quicker. Crock pot on high half full of water. Boil 4 hrs. Shaking and flipping can every 15 min.

    Let's get one thing straight if you're using the metric system for measuring you can't throw in a teaspoon in the mix. By the way you need to translate for us yanks.

      Gary Burchett Here you go for us Yanks 😉 Brown Sugar - 2 cups, Butter, 2/3cups or 5-1/3 tablespoons, Milk - 1/2 cup. I’d also add a dash of salt too to balance sugar.

    I always use a heavy aluminum pan when making candy. You have less burning in the bottom of a pan than you will get with stainless steel.

      I happened to be a chef in a baker and I know milliliters in grams are more accurate that I've never had problems in that area but it's pain in the butt to have to convert

    Just tried this recipe! The flavor was phenomenal, but it didn't get the fudgy texture, it hardened too much. Any ideas why that could happen?
    I realized when pouring the mixture that it was already solidifying

      It was likely cooked too long for the caramel chewiness. I dont like them too soft so am planning to do just that.

    I used light brown sugar, real milk, and salted butter
    Taste: OMG THAT'S GOOOD
    Texture: ooey gooey stretchy....will not cut into pieces, I'll have to put in bowl to use as ice cream topping or such, actually a bit thicker than ice cream topping
    What did I do wrong? I've put it in the deep freeze to harden it up

    Todd: For the sake of MY sanity, PLEASE give measurements in cups and ounces also, as my American friends keep coming to me to transpose measurements for them. I live in America NOW, and for some reason, they can't seem to grasp metrics in ANY way, shape, OR form. Love your recipes, by-the-by.

      I live in Canada and we have the metric system but in school we went w the lb. Ounces, etc so I have a hell of a time w metric. I agree, post both measurements. Thanks.🇨🇦

    I made this but even overnight in the fridge my batch never really set firm. It was still very soft and sticky - wasn't able to cut it into pieces. any idea where I went wrong?

      Same for mine. Was too soft so I had to put it in the freezer to cut it, but it goes soft very fast…

    Finally an easy way to make fudge. Looks awesome mate. My dad had a go at making toffee once and it turned out quite hard but it was still nice and the aroma coming from the kitchen was pretty good. Great video mate 👍

    Every recipe I find and follow says to add white chocolate after taking it off the heat. All my fudge becomes crumbly when I try to cut it. Going to try this method without the choc and see how it goes 👍👍
