Have you tried using Chinese black vinegar ? It's much more common in Chinese cooking and a lot in Chinese food from western China. I think it adds a great extra depth of flavor and almost earthy/wood notes along with a softer sour flavor. In Chinese it's called 老醋 Lao cu
She said in one of her videos she prefers to use the Chinese vinegar but it is very hard to come by where she lives. While I am sure she has it, I think she used the regular vinegar because her viewers might not have access to it.
I just made these tonight and they were a big hit! I used 1 TB of store bought chili oil instead of 4 because spicy foods upsets my stomach. So flavorful. Definitely going in rotation. Thank you Marion. I love your cooking videos!

Came here by accident. Made the recipe. Failed a bit with folding the dumplings and as such, a couple turned out pretty monsterous after they went into the water. Nonetheless, came back to tell you that these are THE BEST dumplings I ever had! I'm not even kidding. People.. If you can't cook for shit just try it. You will have some fails but these dumplings are epic. It takes some time to make but it's worth it. Ty so much for the recipe.

The issue was that while Alvin and Adam kept going back to their heritage (Chinese/Japanese) in every episode, you reinvented yourself with a much larger repertoire- I don't know if that ended up hurting you. I also used your recipe for the chilli oil which is absolutely divine and this is one of the best dinners I have had ever 😍 even the picky kids mopped up their plates (I made mini wontons for them by cutting the wonton wrappers in 4 and without the chilli for them). You made baby wontons! Great creativity. In fact, I want to make some ahead and freeze them and I think if you make ahead mini sized, they be easier to store them in the freezer. Just throw them in the bag after they set up. Thanks!

Dear Marion, I don’t eat pork or beef but I want to try so many of your dishes that contains pork or beef. Would you recommend turkey or chicken mince for this particular recipe and lamb mince or lamb chunks for the ones that has beef?
I'm Muslim and I assume, you're concern is due to religious reasons too. Just substitute them to chicken or turkey or even any seafood like shrimp or even veggies!

Yes, pre-made dumpling (wonton) skins are quite easily available in Asian supermarkets or even regular supermarkets. They come both fresh or frozen; the latter needs to be left to thaw in the fridge etc. and usually you can re-freeze what hasn't been used. You could try making your own wonton skins if you love making fresh pasta, though the recipe usually calls for slightly more unusual "alkaline water" (lye water) which gives the wonton wrappers their characteristic yellow colour and a more chewy, bouncy texture.

I've made them with ground chicken. Added a pinch of Chinese five spice to the mix because chicken is milder than pork and it was great.
