    Wontons in Chili Oil
    Ingredients
    For the Chili Oil
    1 1/2 tbsp Sichuan peppercorns
    1/2 cup avocado, vegetable, peanut or canola oil
    3 cloves garlic, finely chopped (approximately 1 tbsp)
    1 oz ginger, finely chopped (approximately 1 tbsp)
    1 green onions, finely chopped, separate white and green part
    3 tbsp Thai chili flakes, you can substitute to regular red chili flakes to tone down the spiciness
    1 tsp sugar
    1/2 tsp salt
    For the Wontons in Chili Oil
    18 to 20 wontons
    2 heaping tbsp chili oil (recipe above)
    1 tbsp black vinegar
    1 tbsp soy sauce
    1/4 to 1/2 tsp sugar to your taste
    For the Garnish
    chopped cilantro
    sesame seeds

    I used to work at din tai fung. just so you know they use a small splash of broth( chicken) in the mixture that you made after the chili oil. great recipe as always !!

    Ok I'll just come out and say it, come what may. The first shot of the video with the boiling oil instantly frying the garlic and chili flakes did something naughty to my body that I can't explain in polite company.

      I LOVE this recipe for Sichuan Chili Oil…I know Seonkyong has come out with a couple other “extra” chili oil versions since this, but this is the first one I tried…I ALWAYS seem to come back to this one if I feel the need to “stray” and try other versions. I put it on EVERYTHING, including eggs and of course, dumplings. It’s sublime while adding to Brussels sprouts with bacon - gives it the extra kick that takes them over the top! Carrots and other crudite would be wonderful, too - thanks for the idea!

    I just made these and my eyes almost bugged out. These are so freaking good I could barely handle it! It was a bit of a hunt finding black vinegar but I'm so glad I know about it now! I made this with chili powder I brought back from Thailand and holy cow, it is not messing around. My kitchen was a radioactive zone for a while after I made the oil! Truly though, I'm so happy I can make this. It's just as good at the version at DTF and being in control of the ingredients is great. SL, I love you! Thank you for putting me back in touch with my roots!

    It's so weird. I watched your video on making fresh wonton soup last night. And now you're using the same wontons for this recipe.
    I think I'll combine both - fresh wonton in chicken broth with a dollop of chilli oil. Yum yum yummy!

    Let me just say one word for the chili oil, AMAZING! I made this for dinner tonight and it awesome. I found myself testing too many times the oil once made. I wanted to dip this in bread it was so good. I did not have the pepper corns or black vinegar but used balsamic to sub and it was really good. I used the pepper flakes for the first time but scaled to 2 tbsp but will use 3 next time since it was not as bad as I thought it would be, spice wise. Thanks for staple recipe for my family!!

    Made this yesterday on a whim - skipped on the Sichuan pepper corn tho, since I didn't have any, but it turned out amazing anyways. Today I made the dumplings from the previous video, I boiled a few and fried in a pan a couple that I bursted during preparation, then covered everything with this chili oil. Heavenly!     I'm so addicted to this chili sauce that I had to make it today... Only I was out of black vinegar. I used one drop of white vinegar (yes, one drop!) and the juice of one small lime. It was the perfect replacement! So yummy!

    My wife and I are so happy to have found you! We’ve made the shoyu ramen, and it was amazing! Next is spicy miso chicken ramen. After that, we are doing the wonton noodle soup along with this recipe. Thank you for making it so easy to make some of our favorite Asian dishes. Since we moved to Ireland from SoCal it’s been tough finding good Asian food.

    We love Asian food at home. It’s fresh tasty and so much cheaper than going out. We are a family of 6, so going out to Chinese gets expensive.     I tried this recipe today and trust me was so amazingly tasty 😋 way better then we get in the hotels in Madrid. I lived in HK for 5 long years and miss Chinese food so much even my 6 yrs old son is super crazy for Chinese cuisine. He couldn't get enough of this dish. He asked me not fail to thank you😝

    I like using sushi rice vinegar instead because I don’t need to add any sugar and makes the colour brighter for some strange reason!!! This is a actually an old traditional Manchu Qing dynasty traditional banchan!!!

    So true about either loving or hating sichuan pepper! I grew up in Laos and Thailand (so spicy thai food is just such a big part of my diet) but sichuan pepper I absolutely hate lol

    Top those wonton with some fried shallots... Would be heaven! When I make my chilli oil, I like to infuse the oil with additional Chinese flavours like cinnamon, star anise, bay leaf, black cardamom, Szechuan green peppercorn, etc.

    I just had schezwan wonton in chili oil @ Red Ginger Dimsum and Tapas in Asheville NC over the weekend. It was delicious and I was pleasantly surprised when this video popped up. Definitely giving this recipe a try

    Authentic Chinese chili oil contains: huajiao pepper, chili pepper, white sesame seeds and vinegar. We usually don't pour hot oil on garlic and scallion or mix them with chili oil because chili oil can last for a long time but garlic or scallion can easily go bad.

    I love this recipe! I always have three batches at home, one mild (with red bell pepper flakes), medium (with regular chilli flakes) and spicy (with thai chilli flakes). For me personally the proportion of sichuan peppercorn is a tad too high, so I reduce it slightly to accommodate my taste. Delicious!

    The explanation of Szechuan pepper of you was what ive been looking for awhile after i had hongkong spicy dumbling i keep looking for the key ingredient that make the spicy sauce so distinctively stingling.

    Seonkyoung, I have a tip to keep your copper pot shined. Use bar keepers friend powder and your liquid dish detergent to make a paste. It will polish the copper to a perfect shine. Thanks for the wonderful recipes.
