    🍃❤️I've made these before. My kids wanted chopped pepperoni, mushrooms and fresh spinach added to it also! We topped it with a bunch of mozzarella cheese! Awesome!!❤️🍃

    How did you know that I wanted to make stuffed zucchini this week? I didn't want to stuff them with a meat or rice mixture, so this is perfect. I have all of the ingredients in the kitchen (or garden), so I'm good to go. I would make them for lunch today, but I just had zucchini and tomatoes for breakfast, so I need to find something a bit different for lunch.

    I've been experimenting - somewhat successfully I might add - with Japanese cookery over the last few months, but after many years of flirting with the idea, I've decided to give up meat. Nearly every thing I make features meat, so cutting it out has left me floundering; but so many of your recipes are meat and dairy free, or easy substitutions can be made to make them so, and I'm incredibly grateful. Thank you for making this so much easier!

    I love all your recipes and make them here in the US. I too have the salt container I noticed on your counter. You have such a great explanation for each dish and because I have a kitchen scale, I enjoy that you give the weights of each ingredient.

    Zucchini season is on in Oklahoma! I was just looking for the perfect newrecipe to make a batch of stuffed zuch to freeze for use later on in the year. Preserve while the harvest is fresh. Don't give your neighbors all your zucchini - stuff them an freeze them. This would be sooo good layered with a sauce and extra cheese. Then you could have a quick meal during a busy week. Dude - I LOVE this recipe!

    Albert, I made these for dinner tonight and they were a definite hit with everyone. My only deviation from your recipe was a pinch of crushed red pepper. They only lasted a bit longer than your broccoli and cheese croquettes I made a few months ago. 🙂

    I make these with a sausage onion, garlic, breadcrumb and seasoning, Top with cheese. We called them zucchini boats. Delicious 😋

    I was literally going to.make this exact dish tonight but with minced pork in the tomato sauce as I had harvested one green, one white and one round courgette us two small aubergines from my garden this week. I also threw in a large tomato and stuffed the lot. It was absolutely delicious. 🙂

      @@SpainonaForkI decided to make these for my sister today and she loved them. I had some leftover sauce in the pan so I put on some pasta to boil then added some pasta water to thin out the sauce. I added the pasta to the sauce and it has to be the best pasta dish I ever made! Wow!

    Wow! This is the perfect keto dish (I think…), and can be WFPB by using vegan cheese. Adding a bit of ground Italian sausage, or chorizo (vegan or not), and you’ve got zucchini pizza!

    Why not using thecarved-out zucchini pulp as well in the mixture?

      It’s mostly just seeds and watery gel-like stuff. It would give the sauce an unpleasant mouthfeel with the seeds and make it watery.

    Looks simple and tasty. But you might want to try making a mornay sauce to top it together with the cheese. It's not that much additional work.

    Adding the garlic right as the other veggies are almost done and letting the garlic do its thing means you don't have to fret over the veggies quite as much, not having to stir constantly. 😉

    If you don't want your garlic to brown too much or burn... don't put it in so early!
