    Nigella’s cooking show was the first one that really cared about sound. The juices splattering in the fry pan, the sounds of the gas oven, the sounds of the city. She was doing ASMR before anyone.

      At that time, the mix wasn't common. Most supermarkets only had the odd lettuce. It really was called designer mix because it was meant to be extra special. Now it ubiquitous

    I can’t sleep and it’s the middle of the night. I had cubed pancetta, arugula, Asiago cheese, and Dijon and red wine vinegar. I made the salad. Wonderful!

      gaming sessions or reading sessions do that for me sometimes. Eating, gaming, fiction- it's all dopamine. If its good your brain doesn't make distinction

      Me either and I always tell them they should go to the Doctor there are many signs the body gives if they can say "oh what's this mild pain in my belly? nothing I guess" they are broken.

      I actually had a boyfriend who only bothered to eat every 2-3 days. He would feel hunger pangs and be surprised by it, had to think it over, and then realize he hadn't eaten in the past 2 days. he told me that when he was little, and his parents called him inside for meal time, he would run away from them. Yeah, that relationship was doomed. I need to marry a baker.

    2:25 Just imagine making this salad dressing because you were too busy to eat, and end up having to clean the whole kitchen because there's splashed grease all over your stove and countertop. Anyhow, watching these old videos of Nigella is funny and soothing.

    I need more people like this. More cooks like this. Especially for the younger viewers.
    Tiktok and instagram chefs are so self absorbed and all they do is want to show off that they make pretty food. Unlike Nigella who cooks to make people happy.

    I make a dressing like that but also add a whole garlic clove, a little honey or brown sugar, salt, pepper, a dash of Worcestershire, pinch of cayenne and I use whole grain mustard if I have it. It's SO good.

    Just wanted to say I've been watching your cooking programs, mainly on t.v. And now on the internet. I like your want to cook for family, friends and self without putting too much time on cooking, I'm the same. Your food is inspirational , I just use halal food where necessary. couple of times I made your quick chocolate cookies, that you had made for your friend who was upset.     those shrimp patties look delish! Can't wait to try them! I grew up eating shrimp toast, it's basically the same thing, except we spread the shrimp mix on a piece of bread, then cover w/ sesame seeds and then fry it up on both sides. Truth be told I was never a fan of the sesame seed part so these shrimp patties are super ideal for me :)

      She’s referring to the orange roe (also called corals) that you get from shucking scallops. Most people toss it away, but apparently, it’s very edible.

      No need to peel onions, garlic, ginger, etc. when used in a marinade. Enjoy!

      Less work, but mostly, the garlic will be deliciously sweet when you squeeze the soften pulp out. And the inside of the onion won’t burn, but will be soft and sweet. I do this all the time. Try it, you won’t regret it.

      Skins in a roast generally protect the garlic from burning, but also sweeten the garlic. Plus caramelized onions are heavenly.

    I'm sure Nigella wouldn't immerse salt water mussels in freshwater. And unless you're an otter, freshwater mussels don't taste very good. There is also word they are endangered.

      Some dishes have ingredients that are already salty. If you don’t need to have salt, don’t just add it for the sake of seasoning it. Example: the pancetta and the cheese in the salad are salty. Salt went into the tahini sauce for the lamb dish. Also in the pasta water for the pasta. She salts the roast chicken and vegetables at the end to prevent water leakage. It’s about understanding what your ingredients will give you when combined with other ingredients, and how to combine them creatively.
