  • In this episode I show you how to smoke rib tips! I smoke them the same way I smoke spare ribs: 250*F for 5 to 6 hours. For flavor I used my BBQ dry rub and my homemade Sweet & Spicy BBQ sauce to glaze them the last 5 minutes.
    I used 100% hardwood lump charcoal with apple and cherry wood chunks for smoke.

    That was extremely helpful, and I definitely am going to try your Sriracha thing before adding my rub. There was (is - not sure now) an amazing BBQ place in Waukegan, Illinois years ago that was famous for its rib tips. We'd drive down from Madison, WI to go visit our friends there, and we'd ALWAYS get rib tips to go. Oh man... soooo good. Thanks for this video!

    i like the hot sauce rub never used it but i used mustard just now 10:27 pm i want to cook in the morning can i rub the hot sauce in the morning before putting it on the grill, and with the hot sauce does it give it a hot taste.

    Awesome video John I have been looking for a good video on how to Smoke Rip Tips I am a beginner with smoking and looking for tips and tricks about it. I also bought 35 LBS of Rip Tips so pretty sure if I mess up I have more to try out lol. And also what are the name of those Black gloves you wear?

      Thank you! Rib tips are pretty forgiving so don't stress too much about it. Just don't over cook them! If they come out chewy then they're undercooked. You'll get the hang of it. I buy those gloves from Amazon. Just search for disposable gloves that are food safe.

    I always overnight my ribs with my rub. Whenever I don't I just don't get the flavor that much and doesn't taste as good. I've never had that moisture issue it always comes out juicy and tender. Also my most favorite method of keeping the rub on is using honey(carolina style), I've been doing the boring mustard thing in the past till I moved to the carolinas and discovered that they use honey and this has been my favorite method ever since.

      Perfect juicy rib tips. Now some places that sell ribs and rib tips cook their ribs and rib tips too long, and the meat is tough and the bark is HARD. Yours came out just right👍

    When I lived in the Midwest we could go to just about any authentic BBQ shack and get rib tips. It was my favorite part of the ribs. Nothing like using your tongue lips and teeth to pick through the bone and fatty cartilage for the smokey meat. Not only are they delicious, but the act of eating them is actually kind of fun. Then we moved to Arizona, and every time I utter the words "rib tips," even in the areas most well known BBQ joints, everyone looks at me like I've got an extra head growing out the side of my neck. They have no idea what I'm talking about, and literally no one smokes em and sells them. They must literally be throwing all of that meat away or something. This should be a crime, punishable by... well... by something pretty darn awful, that's for sure. I've always said I should buy a food truck and sell nothing but rib tips. I bet I'd have lines around the block out here in No Rib-Tip Land, Arizona. They don't know stuff here.

In fact, she's head over all five of their Arizona locations, so I don't see how she'd let me screw it up. Besides, I not only do all of the cooking in my home, I'm pretty darned fluent in true BBQ.

    Great video John! Finally got a 18.5 weber smokey mountain, and had a question. I set mine up the same(minion method), I use Kingsford charcoal, and only a few chunks of wood. I've noticed I always get a bitter taste on my meat every time I set it up this way, what do you think it could be? I've tried different woods, Apple, cherry, hickory, and pecan. Doesn't make a difference. The charcoal? Wood? I can't seem to figure it out. Thanks in advance!

      Congrats on the WSM! There are a lot of variables that can cause this... but I'll give it my best shot. Are you adding unlit charcoal during the cooking process? This can produce a bitter taste. Instead, get the coals lit in a grill or chimney, then add them to the smoker when they're ready. I use 100% hardwood lump charcoal and it burns cleaner than briquettes. You can add unlit coals during cooking without this problem. Hickory and mesquite are more bitter so that could be it too. Fruity woods are less bitter. If you only add a few chunks then either way it shouldn't be a problem. If you add too much wood though it'll definitely give the meat a bitter taste. Try cutting back next time and see if it gets any better. Good luck and hope this helps!

      Thanks and yea, I'm from Chicago. If you can't find rib tips on their own, buy spare ribs and trim the tips off. Smoke the ribs and save the tips until you save a few pounds and then have a rib tip cookout. I have a video on how to trim spare ribs if you're interested. Thanks for watching!

    John, what's the best way to tell when these meats are done? I seem to not be able to really tell when I have smoked my meats for too short of a time or too long. What's the best way to tell?

      Get yourself an instaread digital meat thermometer and never over/under cook your meat again.

      No, not really. Maybe someone with a better pallet than mine can. It's main purpose is to act as a glue for the rub to stick on and I'd like to think it adds a bit of heat to the meat.

    You can put it on for overnight just don't go heavy Those rib tips are too dark they've been over smoke
