Dude you have never steered me wrong. I'm 47 and live out in the country in Arkansas. We NEVER ate St Louis style. We always ate cartilage and all. I have watched other videos and got frustrated but this one makes trimming seem a lot easier..plus your loaded potato soup video got me extra sexy time with the missus. THANK YOU AB

Truth right there, trim them yourself, when I lived in Washington state they sold one sparerib cut down the middle as two St Louis cut ribs, what a joke. We waste nothing, season those trimmings, smoke them up, add meaty parts to your beans and such, bony parts get boiled down to smoked pork stock for slow cooker sauce for a boston butt for when you don’t have time to fire up the smoker.
Yo AB my lady and kid always be asking me to make that smothered chicken. She even said that helped bring our family back together, and that straight up playa for real!
This one BBQ place near where I used to live cooked up the full spare ribs as is with minimal trimming, then after cooking them trimmed them down to St. Louis style and sold them that way. Then they separately sold the rib tips too. The rib tips were my favorite thing at that restaurant. They were awesome. Just another idea to throw out there.
Wow - thanks I get these for my dogs -they are on raw - bc they are the most economical raw bones for me. I cut with kitchen scissors and it’s a mission . What kind of knife is that ? I have a hard time keeping my knives sharp, and how to sharpen and if you use serrated how to sharpen them? Thanks
I make killer smoked ribs so this is a great tip! Did you post a video on what to do with the trimmings? Also, how long will pork ribs keep in the fridge before you have to cook them. I mean, how long do I have before I have to rub and throw them on the grill? I'd like to butcher them in advance of the 4th.
I have a grill with a built in cover. I don't know how to control the heat so the ribs won't cook so fast or burn. I haven't cooked on a grill and I am nervous about it. My plan B is cook the meat in an oven. The best taste is over charcoal. Any suggestions?
Rib tips. Get you a pot of lima beans, them big old white kind, chop up some of that pork and braise it in a skillet then cook it slow with them beans, with some onions, salt, black pepper, and garlic. That's all you need for a good pot of lima beans.
I didn't know that top part was rib tips till another video AB did and I was like damn ok. Honestly I only do spare because I like that too section and I cook it with the tip and eat it like a giant rib. Next time imma make tips and see how i do.

When I cut my spare ribs into St Louis style I take the rib tips and season them on the grill and then use them for either my baked beans or collards.
