Stress Free Vegan Christmas Menu Ideas: • Vegan Christmas Menu I...
✨INGREDIENTS✨
#1 Candied Almonds
200g raw almonds (7,05oz) = (1 ⅓ cup + 1 tbsp)
125g sugar (⅔ cup)
80ml water (⅓ cup)
a generous pinch of salt
1/2 tbsp cinnamon
1 tsp vanilla
→ yields around 4 servings
#2 Vegan Handbrot
2 tsp sugar
½ cup warm water (125ml)
1 tbsp olive oil
2 tsp dry active yeast
250g all purpose flour* (2 cups + 1 tbsp)
1 tsp salt
3/4 block of smoked tofu (150g)
1 red onion
oil for the pan
4-5 handfuls of vegan pizza cheese
or make some of my vegan cheese sauce**
*you can also sub spelt flour, but then make sure to add 1-2 tbsp more water
** Melt 1 tbsp of vegan butter on medium high heat. Add 1 tbsp of cornstarch and mix that in. Pour in ¾ cup of non dairy milk (180ml). Bring it up to a quick boil, then turn the heat to medium, stirring frequently until it thickens up. Then add 1-2 handfuls of vegan pizza cheese, a pinch of turmeric, a generous pinch of salt (or to taste) and 1 tsp of white wine vinegar. Continue mixing until you have reached your desired consistency. This recipe can be helpful if you don’t have that much vegan cheese at home, or the vegan cheese you have is not that great or just don’t wanna use up all your vegan cheese at once.

→ yields 4 little breads
#3 Kinderpunsch
1 cup apple juice (250ml)
½ cup cherry juice (125ml)
⅓ cup grape juice (80ml)
1 squeeze of fresh lemon juice
the peel of half of an organic orange (or add a splash of orange juice)
1 bag of cinnamon-y christmassy tea
→ serves 2 ; amount can easily be doubled or tripled of course
#4 Vegan Mutzen aka vegan Donut Holes
1 1/2 tbsp cold vegan butter = 23g
1/2 cup non dairy milk (125ml)
1 tbsp lemon juice
1 tsp vanilla
4 ½ tbsp sugar
2 tsp dried active yeast
250g spelt flour + a bit more for the surface (2 cups + 2 tsp)
1/2 tsp salt
also ½ litre or 2 cups of frying oil
PLEASE be careful when adding the bites to the oil or taking them out again - hot oil splashes are painful.
→ yields around 30 little bites
#5 Vegan Tofu Sausage Buns
1 clove of garlic
1 small onion
Oil for the pan
1 block of firm plain tofu (200g = 7oz)
1⁄2 cup quick oats (45g)
1 tbsp yellow mustard
1 tbsp BBQ sauce
1/2 tsp smoked paprika
1 tbsp white wine vinegar
2 tbsp cornstarch
a handful of fresh or frozen herbs
salt, pepper to taste
1-2 tbsp olive oil for frying
also 8 - 10 small rice paper sheets
2 onions, cut into rings and fried in ½ tbsp vegan butter and ½ tbsp of oil and seasoned to taste
mustard, ketchup
yields 8 - 10 tofu sausages
#6 Vegan Crepes
180g spelt or all purpose flour ( 1 ½ cup OR 6,3 oz)
2 tbsp corn starch
1 tsp baking powder
1/4 tsp salt
2 ½ tbsp raw sugar
1/2 tsp vanilla
1 1/2 cups non dairy milk (375ml)
1 tsp apple cider vinegar
coconut oil (for greasing the pan every once in a while)
also fillings/toppings of choice
depending on how big you make them this yields 6 - 10 crepes

Mutzen are from Northern Germany. That’s why a lot of people from other areas of Germany don’t know them 👀
In other areas they are called Kräppelchen. I feel like they have 100 different names haha

I think its funny that even in Hamburg they are called Schmalzkuchen but in Lübeck, a city just nearby its called Mutzen. And nobody knows what I am talking about when I say Schmalzkuchen here in Lübeck.
@@emmi7973 i noticed that last week, when i visited Lübeck. I always knew these things as Schmalzkuchen (coming from Hannover), and my friends from Lübeck actually didn‘t know what i meant, eventhough every other stand sold Mutzen 😂😂

I tried the vegan crêpes yesterday and ate them with my boyfriend's family. We all liked them a lot! They worked out perfectly fine, even the first one was perfect already. None of them fell apart or anything. I used vanillin sugar instead of vanilla extract because I didn't have any - I also added some cinnamon and a splash of neutral oil. They turned out slightly tasking like vanilla and cinnamon and smelled really great!
I can definitely recommend the recipe because here you can be sure that it will work the way you want it to - and that even though I tripled the ingredients!
We used a crêpe maker instead of a pan by the way.

Have you ever tried "Kaiserschmarrn"? It's from Austria, they're sort of big fluffy pancakes chunks, and they are legit delicious!
Kaiserschmarrn is also really common in Germany! At least in Bavaria (where I’m from) I LOVE it

in Austria you never get Kaiserschmarrn at Christmas markets. More like Baked Potatoes with cream, Langos (hungarian fried dough disk with garlic oil), baked chestnuts, etc

Hey Mina, ich hab einen kleinen Tipp für dich für den Hefeteig 🙈wenn du das Fett (Butter oder Öl) nicht direkt auf die Hefe gibst dann geht der Teig besser auf😜weil sich das Fett nicht um die Hefe legt ☺️☺️also zum Beispiel die Butter erst zum Teig geben wenn du schon etwas umgerührt hast

Funny to see what you guys have at your christmas markets. Austrians do love their Punsch, but we are also big on Pretzels (sweet and savoury), Maroni, Bratkartoffel and Kartoffelpuffer, Belgian Waffles, Buchteln, Raclette and Langos!
