Hello Xiao, I made your beef and broccoli recipe today and it was fantastic! I have been looking high and low for a good recipe and yours was it! I have looked at about 25 recipes for this dish and made about 7 and yours was the best! I only reduced the black pepper to my taste and used clear rice wine, but everything else was the same. Made this today - another triumph - loving these recipes that take less than half hour including prep and taste as though major effort went into them - more please!!
I learned a trick yrs ago. When marinating ur beef add a pinch of baking soda. Just a pinch now. This way it will be so tender and u can use an expensive cut. I also do it to chicken.
@@misstynax3 The technique mentioned above has two purposes. The baking soda (NOT baking powder) breaks down the connective tissues in the meat which makes it more tender. The corn/potato/arrowroot/tapioca starch acts like a binder which will help marinade ingredients cling on to the meat and traps the juices into the meat. Adding a bit of egg white also helps. Look up the technique called Velveting, it's famously used in Chinese cuisine. But Vietnamese "wannabe chinese" kitchens often don't use these techniques which will again result in chewy meat.

The meat will not be as tender and the sugar is negligible as calories or for insulin.
