This is my take on jerk chicken. I marinade my chicken in a jerk chicken marinade overnight. Grill my jerk chicken on a weber kettle grill with 2-zone grilling for searing and cooking the jerk chicken. Then glaze my jerk chicken with a jerk chicken sauce recipe.
Grilled Jerk Chicken Recipe.
To flavor the chicken it's all about the marinade. Here is the recipe I used:
- 3-4 green onions (diced)
- 1-2 scotch bonnet pepper (depending on how hot you like it)
- ¼ cup fresh lime juice (about 3 limes)
- 2T soy sauce
- 3T olive oil
- 2T salt
- 1T brown sugar
- 2t cracked black pepper
- 1 Heaping Tablespoon Jerk Seasoning
You combine all those ingredients in a blender and puree until smooth.
And while the chicken was cooking, I made a final glaze. Here is my recipe:
- 3-4 scallions sliced thin
- 3 cloves of garlic chopped
- 1 scotch bonnet pepper finely chopped -- once again I stress safety with these peppers
- 1T fresh thyme minced
- 1T Jamaican Jerk seasoning
- 2 limes juiced
- ½ cup ketchup
- ½ cup pineapple juice
Place all ingredients in a food processor and pulse it a few times. But I like to leave mine a little chunky -- so don't go crazy here.

This recipe is awesome. I marinaded the chicken for 36 hrs. I used cranberry juice instead of pineapple juice in the sauce. Didn’t have pineapple. But was incredible. Thank you Malcolm.

First fault I have found, and I need to point it out- please emphasize the mangrates. They really are a crucial part of the cook, its tough to get that sear and great outside without them.

True Jamaican jerk is first dry rubbed,then wet rubbed,then slow smoked over pimento,wood,and sweet wood,with pimento leaves,.wet jerk rub,has pimento and scotch bonnets print onion and fresh thyme in the wet rub.,

MMMMM.... That looks awesome buddy! I do my jerk similar, but add some dark rum and lots of brown sugar to the overnight or two marinade. Makes it caramelize nice and lock in the flavors.....

Looks good but in Jamaica we don't glaze our jerk chicken. To serve we chop and add ketchup and a pepper sauce made from scotch bonnet .

The best Jamaican jerk seasoning in my opinion is Walkerswood, and slap some Cal's tomato ketchup or Grace tomato ketchup and you will be you tap dancing from joy in no time lol.

Could you clarify which glaze recipe you recommend for this? Is it the one you verbalized in the vid (molasses, worcestershire , vinegar etc) or the one you added to the description (ketchup, pineapple juice, soy sauce)?

Looking over the recipe for the glaze here and on your blog I see no mention of molasses or brown sugar, yet at 9:20 you say it's in there. How much of each are you using? Also do you heat your glaze to dissolve the brown sugar or no? Hit me man, I'm planning to cook this in about 3 hours.
