      I think the "toughest" part just comes from the fact that they were being challenged with a very, very specific style of cuisine that they were ALL unfamiliar with. It isn't a surprise that they aren't familiar with it, because the only true authentic Chinese kitchens on US soil are the mom and pop takeout places. The high dollar restaurants in the US that claim to be Chinese are really on the same level as all the Italian American places that pretend that they are full Italian restaurants, even though half the dishes on the menu were all first made on US soil.

    As someone who grew up around Chinese cuisine (having a babysitter from Beijing), I can tell you that almost none of these dishes are Chinese and her critiques are very good.

    As a Chinese person, I'll be the first to say that she's not even close to being tough. None of the dishes except perhaps the noodles were remotely close to authentic Chinese so I think she gave a lot of leeway for fusion / interpretation. But there was a ton of things I think any Chinese person would be able to pick out almost immediately like the use of Ramen (Japanese), the cooking methods and spices used (not appropriate for the dish) etc. that she just let pass. And I'm just a very mediocre home cook.

    See! This is how you judge. You point out the flaws in the dishes while explaining why its a flaw. Most judges (JOE) wouldn't have heard Jose's "suck on the head first" and would've told him not to tell them how to eat. Notice how the contestants were respecting her criticism and not fearing her for trying to be some disrespectful know nothing judge. (Joe)

    She was not hard at all, I think she was pretty fair on them considering she tried the dishes, didn't act offended or not eat them at all. She was kind enough to literally tell them what they could of done to make their dishes more authentic, a lot of judges don't even do that, she expanded their knowledge as a chef and it's good to have even if it's not your speciality. She also gave them points when they were nowhere near actual Chinese dishes. She's genuine, passionate and gives constructive criticism and not just criticise, there's a difference. You think she's harsh but in Asian standards she's so toned-down and nice, there was no verbal abuse/emotional damage at all lol. If they had to cook British food I'm sure Gordon Ramsey would of critiqued in the same way or maybe even harsher. Plus, anyone who is the person of the cultural food that people are trying to cook of course you want the food to be as genuine as possible, especially if those chef are supposedly of high standards.

      I would say non of them are but authentic high-end Chinese cuisines has very different cooking philosophy than the Western ones, you simply won't know any of that knowledge from eating in most of the "Asian" diners that make "fusion styled" food.

    Honestly, she was more than respectful. She stated the facts and said nothing personal, and even complimented the parts she enjoyed.
    That being said, serving MISO and RAMEN as Chinese food? That’s borderline disrespectful at that point! Most average Americans - people who aren’t Asian nor pro chefs - have probably been served miso soup as a starter at their local Japanese-American sushi restaurants. Miso and ramen being Japanese should be common knowledge among the non-Asian average joe. As professional chefs, they should definitely know better.

      Ramen is technically Chinese. It's a localized version of Lamian, a Northern Chinese noodle dish. A lot of what Americans consider as only japanese food is actually Chuka Ryori - Japanese Chinese cuisine.

      @@justiniantbh American chefs and their training tends to be shallow unless they go out of their way to dive deep into a cuisine and culture. All the systems used to educate aspiring cooks have collapsed. The apprentice system is basically non-existent nowadays. Hotel kitchens are no longer a consistent training ground. Hiring for the dish pit has gotten so challenging that it's become a destination instead of an entry point.

That's like if you make yakisoba and then call it chinese lo mein. Pairing the ramen with miso definitely puts it in the japanese cuisine category. We chinese do not use miso in our food.

      She's not though. Making good tasting food isn't the only goal here. Chinese cooking follows specific rules, and if you make something that tastes good but doesn't follow those Chinese rules, you still failed. I've lived in the Chinese culture area for half of my life, including Beijing, where the judge is from. I think she was actually very gracious and generous. If you sat most of that in front of Beijingers, they'd eat it, but would absolutely deny it being in any way Chinese. *Food can be amazing and still fail a challenge.*

    It’s kinda insulting how when a Chinese challenge is announced, contestants just throw in ingredients that remotely sound Asian. It just shows ignorance on the chefs part or a complete lack of care for what ingredients truly represent Chinese cuisine. They are supposed to be chefs aren’t they? Embarrassing thinking miso is a Chinese ingredient

    It’s really disingenuous to call her too tough or overly critical or say she’s “tearing apart” dishes, especially considering how honest and detailed her critique was and the fact that she genuinely was very clear and thoughtful while bringing up the actual flaws of the dishes.     The guest judge was great: I never knew the shapes were supposed to match!
    And it's always good to see people outside of their comfort zones. That's when the tough get going, and pull it out. Or not.

      I'm pretty sure the whole matching thing is in part to feng shui and balance and harmony. It's such an important part of Chinese culture. A lot of people believe in it.

    As someone who has eaten Sichuan peppercorns, Motto probably should not have used them in this challenge. It doesn’t provide heat like most spices, it is quite literally a numbing agent. It’s not enough to paralyze your tongue but it leaves a weird coating. I tend to describe it as a metallic taste/feeling but if you have a better description, let me know.
    Even for seasoned chefs who are familiar with the flavor and feeling of Sichuan peppercorns, it’s still a strong spice that can overpower anything. I’m not sure if Motto ever had them but they are pretty overpowering (to the point where a Chinese local I knew would warn me about them and wouldn’t eat them if he could avoid it). He played it right in theory, but in practice, he didn’t get it and he may not have known

    To be super fair, most western “Chinese” dishes are not actual Chinese dishes. They’re simplified or westernized versions of traditional Chinese cuisine.

    I find it funny that in a previous season someone had served a dish with Shrimp head and the panel of judges did not even give it a try and on then we have this guest judge who not only removed the head but also sucked on it.
