That shade of yellow is definitely food colouring. Anyone who cooks regularly with turmeric can tell that that colour is not turmeric. It’s too fluorescent. I’m pretty sure that’s why Gordon was suspect about it. And the chef confirmed he added yellow.
Because of the amount of aromatics and spices used in Indian, it’s extremely easy to tell when the food is old, and spices are what give dishes such vibrant colors, if you cut corners with food coloring then it won’t have the taste it’s supposed to
I mean, Gordon has visited Assam; so I'd expect him to know about Indo-Chinese cuisine. It's a real staple. Hummus on the other hand shouldn't be within a 2 mile radius of an Indian restaurant.

I’m telling you, the politeness, transparency, and professionalism of that front of the house is the only reason Gordon didn’t go absolutely nuts on them. The thing I’ve always appreciated the most about him is that no matter how awful the food is, he always takes it up with the kitchen/owner, never the servers as long as they’re professional.
I have been to this restaurant back in USA. The Service and the Food quality was amazing. The Owners and the staff are very nice people. Wish them the best of luck!!!

Samosas are meant to be cooked on the spot, from the dough to the filling. And devoured right after taking out of the fryer. This was embarrassing to watch.
Sadly, this doesn't just apply to food. It is relevant in nearly every walk of life. MOST people just do not care about whatever it is they're doing. I can't resonate with that, but I've seen it *SO* often, I just have to accept that 90% or more people are like that.
The rest of it aside, a fresh of the tandoor fluffy naan (doesn't even need butter) goes extremely well with any Indo-Chinese gravy (if well-made and not flooded with ketchup or color). Tastewise is totally bae. Also I have never seen Biryani that doesn't come layered in a pot. That's gotta be bummer. Day old samosas are a total no no. The starch in potatoes sours real quick. And here's the thing about prawns. As a person from the coastal tourist town - Puri (Odisha) you will be really hard-pressed to find fresh prawns served anywhere in the country. Its a hard thing to maintain in inventory and develops all kinds of wrong textures very easily. The only prawns I ever liked besides homecooked prawns are in Goa. They have a high volume of footfall probably that allows them to have fresh stock in rotation. Never order prawns in a restaurant that doesn't seem to be getting a high volume of orders for the same.
