- We take basic meals and show both ways to explain how easy it can be to please everyone in your family without eating out all the time.
Joe’s chili
1.5 lbs ground beef, cooked or cook it after your onions have cooked for about 5 minutes
1.5 cups diced onions
4 Tbsp chili powder
1-2 tsp cayenne pepper, if desired
2 tsp smoked paprika
1 28 oz can crushed tomatoes
1 6 oz can tomato paste
2 cups water
Heat a large pot on medium heat then add onions. Stir frequently and let them sweat for about 3 minutes. If the ground beef isn’t cooked, then add it now. And cook till done. Add the spices and let them “bloom” for about 2 minutes to get the maximum flavor. Add the tomatoes, paste and water. Stir to combine. Once it comes back up to a low boil, turn to low and cover. Let it simmer for at least 90 min stirring every 20 minutes or so. Let it rest for about 20 minutes before serving.
Joe’s chili made veggie style
1.5 cups diced onions
12 oz frozen bag of riced cauliflower, thawed
1 cup diced carrots
1 cup diced green pepper
4 Tbsp taco seasoning
1 28 oz can crushed tomatoes
1 6 oz can tomato paste
2 cups water
Heat a large pot on medium heat then add onions. Stir frequently and let them sweat for about 3 minutes. Add the carrots, green pepper and cauliflower and let them cook for about 5 minutes stirring frequently. Add the spices and let them “bloom” for about 2 minutes to get the maximum
flavor. Add the tomatoes, paste and water. Stir to combine. Once it comes back up to a low boil, turn to low and cover. Let it simmer for at least 90 min stirring every 20 minutes or so. Let it rest for about 20 minutes before serving.
Notes and tips:
1. Can easily be made the day before then just heated through when ready to serve.
2. Other ways to use the chili…on a potato, nachos, fries, with noodles to make chili mac,
hot dog, walking taco with Fritos, on rice.
3. Add more heat with hot sauce, pickled jalapenos, or red chili flakes.
Sheila, I’m cooking SAD for my husband too. Just curious, do you feel like the things going into his diet could be killing him knowing what you know? I feel that way even though he insists on eating those things. I know some women just won’t cook for him. I’m not that way and neither are you. What are your reasons?
I cannot make anyone change so I include more of the good things for him. I make multiple veggies each night I cook, fruit for dessert or a fruit bowl to go with his weekend breakfast, raw veggies as a snack while we cook dinner. So let me show you how I put that into action:
Monday - salad and peas to go with a meat he grills, peaches for dessert
Tuesday - Raw celery, carrots, radishes with green beans with a meat, strawberries and grapes for dessert
Wed - Asparagus and corn stir-fry with a meat, applesauce for dessert
Thurs - Salad, roasted zucchini & potato with a meat, pears for dessert
Fri - a big stir fry with all the veggies leftover from the week with any of his leftover meats
Sat - he will make his bacon, eggs, and toast then I serve a fruit salad with strawberries, grapes, blueberries, pineapple
I hope this helps.
@@1Dish2Ways you are right you can not change someone else. I’m just so frustrated that he won’t eat healthier!
