  • The ULTIMATE FRIED RICE (Recipe Below)
Learn to make Fried Rice with restaurant quality. I use Chinese Sausages for a one of a kind sweet and savory flavor. This is my absolute favorite way to cook fried rice and soon it will be yours too. After watching the BBC Fried Rice video, I had to share the true way to make the best fried rice. Enjoy!
    Recipe (8 Servings)
    - White Rice (2 cups)
    - Water (2 cups)
    - Carrot (1 large)
    - Onion (half of large onion)
    - Scallions (3 medium size)
    - Chinese Sausage (5 pieces)
    - Eggs (3 large eggs)
    - Salt (1 tsp)
    - White Pepper (1/2 tsp)
    - Chicken Powder (2/3 tsp)
    - Premium Soy Sauce (splash)
    - Sesame Oil (splash)
    1. Cook Rice using a pot or rice cooker and leave it to dry, can just put in fridge overnight just make sure you have a sort of dry consistency.
    2. Dice all vegetables and sausages, vegetables should be smaller while meat can be bigger. (Watch video for best cutting techniques for each ingredient) Beat the eggs as well.
    3. On a Wok or large pan, cook the meat until the sides of a nice char, then take them back out. Wash the Wok.
    4. Maintain a high heat throughout this whole step. Drizzle a generous amount of oil into a hot wok. Eggs go in first and stir quickly, cook until 75% then throw in the rice. Get the eggs over the rice to avoid burning and start breaking the rice with spatula. You want to break apart any clumps and also constantly flip the rice using the wok or spatula.
    5. After a few minutes, throw in the vegetables (no scallion) and sausage and continue the same process. Flip the rice and break it apart keeping your Wok in constant motion to avoid burns. Then throw in the Dry spices, mix and cook for another 3 minutes.
    6. Throw in scallions and premium soy sauce, cook, then finish off with sesame oil. Mix all the ingredients well and then plate.
