I cooked my tongue for 80 minute and a natural release for 10. JUST INCREDIBLE! Fork tender, greasy moist, tasty and totally worth it. When making tacos, don't make the mistake I did with adding all kinds of toppings. Let the lengua take center stage: use onions, sauce, cilantro and lime. That's it! It will be beautiful.

When my Dad butchered our beef we had tongue often. My Mom would simmer it on the stove, then cut it into pieces and grind it. She would then mix with mayo (also homemade) pickles (homemade too) and onions, then add spices. This would be our families lunch meat for several days. It tasted ok, but I really liked it when she fried up the heart. So good.

I Love Lingua,My late husband was from Meoqui Chichwawa MX.He showed me how to cook Lingua,We use onion and Garlic Clove in it while it cooks,He taught me to cook Authentic Enchaladas and Tamales,Pork and Chili
My Mom would lightly score the lengua before cooking. Just using a razor blade she made random slices all over. It made it very easy to peel once cooked and cooled. And you are 100% right, that broth is the best!

The smell of hand made tortillas and beef tongue was intoxicating, heck even the neighbors used to come and stay chatting with her while cooking just so they could taste her amazing cooking. My fondest memory of her, is how affectionately she used to touch my face while she was cooking in the kitchen. She used to say " you have to feel and provar the flavors of life and what you are cooking . Her beautiful brown hands smelled of life, love and great food. Tongue was never cooked at my house and this is the first time I have ever seen it cooked. I did not know it was so easy. I have had tongue stew/soup at a basque restaurant and it was delicious. Once you get over the ick factor this is going to be a treat.

I think the only time that I ate cow tongue was in California when I lived and worked there while stationed at the old Norton AFB and I loved menuto also which is cow intestine cooked and it was in a Mexican American bar there in town while living out there. When my boys were 5 & 7, I bought a lengua. The older son got a hold of the lengua and chased the younger brother trying to lick him with the lengua. He's 23 and still traumatized by lengua
Have made this many times and I love how it turns out in the Instata Pot compared to boiling the Beef Tongue to make Tacos De Lengua. I like the beef tongue crispy like you do with pork tacos.

Twenty years ago I got my gringo boyfriend to eat lengua tacos with me. He didn’t know what they were at first, but once I told him he was surprised on how much he liked them. We are now married and as of today lengua tacos are his favorite. He has for years been trying to get his family to try them and they won’t budge on the idea of eaten cow tongue. They joke with him about “that’s what happens when you date/marry a Mexican, she gets you to eat things you never grew up eating 🤗
My granny made lengua in a very different style for my papa, so much so us kids looked and ran. Until she made us taste it. From then, papa had to share his lengua with us. Lol
I was raised by my Dad and his Italian/German family so the only way I knew to make tongue was to make slits in it and stick a piece garlic and another of rosemary. The combo killed the gaminess of the tongue was then served sliced in a marinara sauce with noodles. So good! My kids have now introduced me to their Mexican side of the culture and I'm loving it! Thank you, niñas!!

Menudo is stomach lining. Cows have 4 stomachs that why there's different types of pancita meat like honeycomb. Cow intestines are tripas. Just fyi
