      Anette Bøhler Prydz Great thing about risotto is that you can vary the contents endlessly. I usually make mine with bacon, cheddar cheese and cayenne pepper. Not very healthy, but it tastes nice to be sure :)

    Geno, tonight I made risotto with mushrooms and spinach. I had grated some romano cheese for the rissoto when I remembered that I had some bleu cheese as well. I added maybe 50 grams and a splash of heavy cream to my risotto. Oh my goodness! It was heavenly! Not over powering with the bleu cheese flavor, just enough to make it yummy.

    I made this. It was fantastic. I added an entire red onion instead of half, garlic, I also added more butter somewhere in the middle and baby spinach in the middle somewhere.

    my mum's recipe is a delicious beetroot risotto! you made a nice risotto and grate in a good fresh beetroot and its so earthy and sweet. also it goes bright pink!

    in Italy we say that risotto should be "all'onda" meaning it should move and not be all clumped up together and dry..that risotto looked a bit on the dry side..also we would use a shallot (a tiny bit) because red onions are quite overpowering..and contrary to popular belief Italians don't cook with a lot of onion and garlic..nonetheless bravo genna' la prossima volta metti un po' piu di brodo..un bacione

    I made this today ...my first ever self made risotto with my very own brewed chicken stock. I used fennel (finochio) in stead of asparagus, which I sweated along with the onions and cellery. I tell you, it was wonderfull! Such a simple and great dish, but it all comes down to ´caressing´ the rice with a wooden spoon and a good stock! Thank you again, Genarro for a great dish tomorrow we will have lungiune with vongole ....love Italian cuisine! My, my, why am I cooking so good?! Because of Genarro, ofcourse!!

      Alexsander Rain Update: It was indeed amazing. Now I didn't have all the ingredients (like asparagus and celery) but it turned out amazing. I can only imagine if I had those too it would have been even better.

    When I lived in Prague I visited a restaurant regularly that served a risotto with chicken, zucchini, and cherry tomatoes. It was divine! I would also love to see a beef risotto though, as I've never tried one.

    It's a little too dry Gennà, and not very traditional, but it looks good.
    Next time do it more "creamy", or like italians used to say: all'onda.

    Can you please show us a nice mushroom risotto. I love your channel just as much as Jamie's if not more, but don't tell him. You have inspired me so much. I have a very fussy 3 year old and I made your kids pasta for her and she loved it. I was so happy to see her eat something that I know was so healthy for her. She is allergic to dairy, nuts and eggs so it hard to find a healthy meal she can enjoy ( I put in about a third of the Parmesan you said and it didn't seem to bother her that much, although her Dr would kill me). Thank you so much.
