YOU SAVE $300?! KETO FLOUR RECIPE (All-Purpose) 1:1 with Regular Flour

  • Hey ya'll,
    In today's video I'm showing you the recipe I adapted from Victoria's Keto Kitchen's keto all-purpose flour that could save you anywhere from $100-300 a year!
    (Her original recipe: • KETO All-Purpose Flour... )
    It's still low carb, gluten free, and sugar free!
    It was works just as well, with a few minor differences that I'll discuss.
    But it's still a keto 1:1 flour blend that you can substitute in almost any recipe to get shockingly good results!
    Stick around to the end of the video because I'll discuss the comparisons between the two, carb counts, and money you could save!
    I hope you use this flour and it works great (and the extra money in your pocket blesses you)!
    Recipe:
    (If a recipe you're using it in calls for baking soda/powder or cream of tarter, you do not need to add them. Just leave them out. This will keep until one the ingredients expires (whichever one is earliest). This recipe is good for cakes, cookies, savory foods (like fried chicken, thickening gravy, etc.) and pastries. If you're using it for bread recipes, you can use the cheap version of her self-rising flour that I will be posting soon!)
    Ingredients:
    -392 g Almond Flour
    -67g Oat Fiber
    -70 g Whey Protein Powder (Unflavored)
    -13 g Xanthan Gum
    -42 g Baking Powder
    Total Carbs:
    -139.33g carbs per batch, or
    22.3g per cup
    Net Carbs:
    -30.33 g carbs per batch, or
    4.9g carbs per cup
    Directions:
    Combine all ingredients in separate bowl and mix thoroughly with a whisk, then sift (sifting is optional, but highly recommended) into air-tight storage container.
    Yield:
    6.25 cups per batch
    (1 cup= 93 grams)

      I did splurge on the egg white powder just this once, because I saved $700 plus by doing my own plumbing! I watched TH-cam videos until I was confident, and then cleared an overflow line and replaced two faucet cartridges. I agree about the whey protein isolate, though. I've been using it since I reached my goal weight with great results. Loved today's video!

    I had all the products needed for this keto flour on hand so I wanted to give it a try. I hated to buy another product (egg white protein powder, which is so expensive) not knowing if I would even like it.
    I’m still experimenting with it but it is such an awesome keto flour! I made some Toll House cookies and brownies with it and even my picky non-keto hubs loved them. These keto treats came out so much better than with almond flour alone!
    I will definitely recommend this flour! Thanks Random Keto! I just love your cute, perky, fun personality!

      Given the smallish amount of the egg white powder, her flower has definitely been a cost savings, vs how much of it the other recipes called for. But I’d love to see a bread loaf comparison with your version and hers. The only thing of hers that I haven’t had great results with are her bread recipes. But her MICROWAVED versions have been AMAZING.

    I will use both recipes. I frequently add whey to recipes as it mimics gluten and helps things rise. But I also like the texture in hers. Thanks for developing this and look forward to seeing how this works in your recipes.

      @@RandomKeto So a falling out between you and Victoria caused you to lessen the amount of nutrition in a flour recipe? Sad. Eggs trump everything for the protein they provide our bodies. Watch Dr Berg's video called, 'Why I eat 4 eggs a day, and why you should, too.' It explains it ALL there! I'd rather spend my money on nutrition and have it benefit my body better than settle for a lesser than product. Eggs are wonderful nutrition-wise for us! Sometimes price doesn't matter when it comes to nutrition. Also, did you see Victoria's 'short' she made about the science in Keto baking when it comes to whey protein powder versus egg white protein powder? It matters and works much better. I'm sticking with the egg white protein powder. Having better nutrition is worth $300 at the highest amount over a year's time in my opinion, plus the science of baking, it matters.

      @@marymorales1640 Thank you, Mary, but no, I don't have any luxury at all to be able to just buy such an expensive product at all. What I do do is to not buy other things I would like to buy and I also budget to be able to buy the one product my family and I love the most. We ALL do this!
      I'm a little lost in what you are referring to as neither of those ingredients are "new" in baking? Do you mean the whey protein powders? I do not buy those myself, I have severe lactose intolerance and the 'milk protein isolate' ingredient in it KILLS me, unfortunately.I have to pass on that product and many other products due to that, which I guess is the reason why her changing her recipe to using the whey protein powder has me bummed out so much! I'd LOVE to be able to make her recipes and was looking forward to them as well! However, now I won't be able to make any of her recipes as she makes them, I'll need to adjust all of her recipes if I do want to make them which does make it harder! It's the same thing with Alycia on her channel, I have to avoid the whey, again, if that is what you are referring to when you say the ingredients are not new? I guess I'd need clarification about what you are referring to as 'new' products. I reread my comment and I don't talk about new ingredients at all...?
      Anyway, I sacrifice in other areas so I AM able to purchase what I can tolerate and again what my family and I love the most!

    Different brands of whey isolate and whey protein powder have different types of lecithin.
    If you are sensitive to soy, I think that's what the Isopure brand uses. Others I've seen use sunflower lecithin.
    Just something to consider.
    I had to look up the difference between the protein isolate and the protein concentrate powders because I didn't know. Interesting, but I don't think it'll make that much difference in using them interchangeably.
    I have these ingredients so I'm going to make a half batch of this and see if it works for me 😊

      Happy to read you are still going to use the egg white protein powder because eggs have the best available protein for our bodies even over meats! Now that's per Dr Berg and many other doctors here on TH-cam. I do prefer sticking with the egg white protein powder for the nutrition aspect. Sure, it can be a little more expensive but I'd rather spend money on something much better nutrition-wise! It's worth it to me!

    Thank you for this! It's just what I've been searching for over many hours!
    I made a "perfect" flour blend from Victoria's channel. It was expensive. I know baking is a science (for breads and rolls) and directions need to be followd, which I did...the result was not not even close to what her video showed. Fortunately, I am good at repurposing. The failed bread, with my food processor on "mix" and a couple more ingredients turned into a really good 8x8 "snack" cake, and still low carb.

    Thank you so much for this information. Glad to know that there is a less expensive version. I'm fortunate when egg whites powder started to rise a bit I purchased 15 lbs on a restaurant sight so I'm good for a while. But I am definitely going to use your version and mix the 2 to stretch out my stores. Food prices are definitely going to just keep rising.

      I'll be posting the self-rising on Tuesday, and the chocolate chip cookies (my personal recipe from back in highschool) on Friday, and then the biscuits on the following Tuesday after that is my current tentative schedule.

      @@RandomKeto I cannot use "your" flour recipe - but you know that from a comment I already posted asking if I could use beef protein powder instead of whey. I am severely lactose intolerant and cannot use whey at ALL. I get severely sick from it in several ways. I'm bummed you've gone to whey only now. I did enjoy your videos when using the egg white protein powder, so thank you for those! May I say one thing? It seems as if there is some competition on your end to change from using Victoria's flour recipes and it's doesn't seem as if it had much to do with the cost...I've NO clue, I just sensed a feeling of some tension there.... just got that feeling? Strange....but it's not any of 'my' business! Sorry, just stating the vibes I felt when I watched the video.I'm sorry if anything like that did happen. I'm also sorry, again, I cannot make the things you'll be making due to your using whey protein powder. Wishing the BEST to you!

    I'm not sure if the whey protein will act as well as the egg white protein powder. A few people have tested the difference and they said it does not work the same (i.e. Indigo Nili, Janet Greta, etc.). However, if it doesn't, is it worth a try to maybe use less EWP in the mix and sub some WPI? 🤔
    Also, I would add Allulose (per recipe) for browning, but not in the mixture.

      Yes I'm sure you could do that half and half or 1/4 and 3/4, so you're not going through the egg white pp as quickly and still saving money.
      At least on the cookie recipe, I tested both flours and there was almost zero difference in performance or taste, but maybe in like a cake or something it would be more different? In the self rising flour I'm going to post soon I tested it on biscuits (also coming soon) and they were so good. So idk. Maybe it's different brands too? But it is interesting to think of all the possibilities from here!

      @@RandomKeto hey girl, lemme give ya a tip: do reverse measuring to prevent having to take some out of the bowl...place your ingredients (one at a time) on your scale, tare to zero, then take out what you need. The only difference is that the value will be negative, but it's the same. 😊 ❤️ 🥰

My wonderful mother-in-law was recently diagnosed with leukemia (sugar and carbs feed cancer) and I'd like to be able to make her up a batch and send her this video so she'll know how to make more. BTW, if you want a grain free baking powder: 1 tablespoon baking soda, 1 tablespoon arrowroot flour, and 2 tablespoons cream of tarter. It works just as well without the cornstarch.

      @@RandomKeto she’s a stunning 72 year old who looks 55 or 60 (tops). She’s otherwise very healthy and has a very positive prognosis. I think helping her find ways to cut out sugar and carbs will go a long way to getting her to remission. I’ll never convince her to go carnivore so if she will just try keto I’d be thrilled. She loves to bake so maybe this is the key. I’m excited for your self-rising recipe to be ready to share.

      @@RandomKeto I can tell you from experience all the people who say you’ll love your cravings for sweets are all liars! It’s good to have a good plan. I was watching Great British Baking Show which I love despite not willing to eat any of that stuff, and one girl on there was a nice healthy weight with beautiful skin two years ago when she met her boyfriend. Then she discovered a love of baking and is now probably 40 lbs heavier with terrible skin. That makes me so sad that something she’s passionate about is doing her such harm.

    I will definitely try your flour combination, when I finish with what I have. I purchased Bob's Red Mill Whole Grain Oat Flour in a store around here and I liked that it is very light. Using the original flour; the flour was too dark and I did not like it. I am still not happy with the one I found, but it is much lighter than the original one. I'll keep on looking for WHITE oat flour until I find the one I like.
    I can't make a WHITE bread if the flour is dark brown. 🤣🤣🤣

    I love that I have another option, if I’m out of EWP!!❤🎉 I’ve been loving Victoria’s flour so will probably keep using it. I’ve put in so much time and energy - and money - on getting the best keto bread I can. Victoria’s flour has been the answer, on SO many things I’ve been striving for. Though I use my own recipe with it, for bread. Thank you for sharing this (and for the work behind it)!!!
    But feeling like I’ve tried everything, (and in spite of a wild failure rate, overall), I can’t leave this as the only mix I HAVEN’T tried. lol. Side-by-side with hers. 🥳😃 So I’ll probably try this today, and can hardly wait. I think I’ve become ‘clinically obsessed,’ now, with this keto bread quest. 😵‍💫🤷‍♀️🍞

      Did you try the two recipes side by side?
      Were they close enough to go the less expensive route?
      I saw some comments saying that possibly using half egg white and half whey protein would work.
      I'm having to order the protein and I'd like to get the least expensive if it works.
      I've never made a low carb flour blend before.
      This one seems to be a good recipe?

    Another option to drive the cost down is just use half whey and half egg white powder.

    Wow the initial investment for Victoria's flour is expensive. My poor wallet can't handle it so I will be trying your recipe. One question... well two... I'm new to the whole homemade bread thing but I really want to try it. Keto bread in the store is so expensive. Can this be used to make homemade bread? And do we just find a normal bread recipe and use this in place of the flour? Thank you for testing and developing this recipe! ❤🙏

      You'd need a self rising flour recipe, which has the same ingredients in slightly different recipes. I'll be posting it on Tuesday. I haven't tested it on bread though, but I will be very soon! You could definitely try it using Victoria's yeast risen bread recipe, but if you don't want to risk it failing you could wait till I perfect a recipe as well! I'll put it on the list!

    Every time I turn around Victoria's spending more of my money. Really pissed how the pecan flour addition turned out, then a week later she decided she didn't like it and went back to almond. Now she's trying to convince people that Einkorn flour is keto, and is up to 7 net carbs per cup.

    I like your recipe - but many people (myself included) are allergic to Whey protein powder - so just something to keep in mind as far as why some people would not want to use it as an ingredient. I don't mind paying for the bamboo fiber - however, the egg white protein powder is horribly expensive (or was the last time I purchased it -which was only a few days ago and I had to order the largest size of the Now brand because the other sizes worth purchasing were not available.

    I have a freeze dryer and chickens. I went ahead and made a batch of egg white (and egg yokes), but I do not know if freeze dried egg whites are the same as egg white protein powder. I think it is, but not 100% sure. Does anyone know?

      Well the one she recommends is still not in stock, so the nunaturals is the only oat fiber I've tried. Maybe because I don't have anything to compare it to I'm not bothered? But I don't notice any particular taste other than a faint almond taste from the almond flour. 🤷‍♀️ maybe if I tried the other brand I'd know what I was missing and be spoiled by it lol, who knows. I don't plan on changing brands any time soon unless a cheaper one comes along 😂

      That's what I couldn't agree to though. I'm not the only one who will tweak it, and she's not the first to invent it. That's why recipes can't be patented because they're too changeable and people need to be free to try them! Same for this one.     I get my egg white protein powder from lucky vitamin. I saved so much money. On Amazon it was over a dollar an ounce but lucky vitamin it’s under. 1.2 on LV buy 3 is 17.30. 1.2 on Amazon is 22.39. Saving 5$ each. If I bought three off of Amazon of the 1.2 pound I would’ve paid $67 but on lucky vitamin it was $51. I make egg white bread from three different recipes that I have perfected and it takes me quite a while to go through it because I’m only using 1/ 3rd cup for each batch. I will have to check out and see how you’re mix stands up to hers

      @@RandomKeto Well I make the protein sparing modified fast bread. I’ve taken three recipes. Nili Janet Greta’s and Wendy from loving it on keto and added elements of each one. With Janet‘s base recipe and it’s wonderful. I use a cup of fresh egg whites and 1/3 cup of egg white powder. It makes the best bread you’ve ever had

    I am running low on egg white protein and that is sad because it is so expensive. The only ingredient I am missing is the oat fiber but it is in my cart at Amazon. Next time I make an order I am going to try both flour recipes. I just bought a giant bag of King Arthur's 1:1 gluten free flour but it is not keto. It is gluten free. It works really well in cookie recipes. I made my annual pumpkin chocolate chip pecan cookie recipe gluten free this year and they came out excellent. I am going to try to make them keto and see how that works.

      The date is usually below the title somewhere or in the description. The self-rising flour is for breads or biscuits, and the all-purpose is for cakes/cookies or pie crusts.

    How do I make pancakes with this? I tried it out this morning, and they turned out great, even though I accidentally left out the butter. I used one egg, 1 Tbsp buttermilk, and vanilla-flavored protein powder in the mix instead of plain, and added enough of the mix to make a pancake consistency. I thinned just a little with plain water. I would like to standardize a pancake recipe using your flour mix.

      If you check out the oxalate levels in almond flour….it’s scarily SCARILY high and a slow insidious poison that won’t become apparent until much later! Anything you can do to increase the coconut flour quantities (very low oxalate) instead of almond is definitely a much healthier option.
      It does make you wonder how it’s possible that the health food industry conveniently push the highest oxalate toxic foods like almonds, spinach and kale etc… as superfoods! Almost like if they can’t poison you with junk food, they’ll get you a difficult way with the supposed ‘healthy’ stuff! 🙂💕👍🏻

    Do I need to change the ratio of almond flour if it is superfine? If so how much?

    Substitute 1/2 sunflower flour for the almond. Grind your own almonds and sunflower seeds.

    I like that you weigh everything in grams. If you are going to use a single bowl, you really should add the flours from lowest weight to highest, just in case you add too much and need to remove some. Personally, I weigh everything in separate bowls as you would see on any cooking show. I've been weighing my ingredients for decades. Each batch is always the same!
