No idea about the chord stabs, but there were lots of synths that did that kind of thing (Alpha Juno, for example), and you can also do a trick where you stack samples at different pitches onto the same note of a sampler... so instead of playing back one note you might be playing back a whole chord?
Hadn't thought of it tbh - Captain P has already broken down some of the drums so it would have to be something different... Also I'm forever fighting with copyright on these videos so depends what is/isn't allowed!!
