Just tested this with an xbox one controller still works. I found It easier to remap the buttons on the Switch settings once connected compared to the PC software.
I know he already answered, I just want to add that when you map the buttons, it changes the software within the controller itself, so no matter which adapter you use, like the brook wingman XE 2 or this one, the remapping should work.

I'm guessing how it works is the connector on the switch end believes that the device connected is a pro controller, while the xbox controller side makes the controllers believe that the device they are connected to is an xbox. Considering there is only one physical connection it could only count as one, but technically speaking an xbox can connect to two controllers at once so aside from possibly the console determining that there is only one device connected, there should be no issue with connecting two. If you purchase two ports and connect them both separately, there definitely should not be an issue, however that does obviously require purchasing two ports which can be expensive, and you can only use this method attached to the dock or something similar.

Don’t feel stupid. You have the gyroscope in Pro Controller. Also, Pro Controller has the best grip of all controllers I’ve used. Except, maaaaaybe Elite controller, which is nice to hold because of these materials. But the pro controller has an awesome shape. AND the best battery life.
SPC is still better. I had huge problems with the 8bitdo dongle - both of my DS4 controllers were unusable. Their support is also useless, so it's really better to get an SPC and prosper.

I’m sorry. I made a mistake. I thought you are talking about connecting them to PC. With Switch you can connect only one Xbox controller. So, one controller per adapter. If you want more, you will need joy cons or pro controllers. I tried connecting two Xbox controllers and it didn’t work.

Just saw your comment. The layout will be the same as a Nintendo controller. So, A on a xbox controller will be B in your game.

After firmware update of xBox S Controller, the 8bitdo Adapter does not support the connection to Switch.
