Only about 10-15min generally. Up until it foams and no longer steams, that is the moment for crystallization or candiation. BUT NOT till it turnes brown or starts to burn. Then put it away from the heat, while still stiring and tossing it. Then it will slowly get candied you can see it cleary it will turn harder and white.

I tried brown sugar before and it doesn’t have the same effect/sticks together :(
