      Hahaha omg its like that with my family. People like my sister in-laws lasagna but hers is all jarred and canned ingredients and mine is literally homemade to the max, homemade tomato sauce and my own blend of italian seasoning plus i use only high quality and organic ingredients so mine is better than hers 😂😈👍🏽

    PLEASE people don’t crucify me for this. AND editing could be involved so I could TOTALLY be wrong, but while you were talking you went from separating your chicken to grabbing the Italian seasoning to using your hand to putting the garlic back in the bowl. Just be careful. Talking and cooking can sometimes make us forget that we are handling raw food. I swear I’m not being a troll. I’m a restaurant owner and salmonella freaks me out!

    I love the hopefulness with which you continue to print out recipes you aren’t going to follow and yet things turn out. You do need a Food Network show, definitely call it “411 Degrees”

    The way you cook, "I don't know, until it's done?" "How much do we need? Eh, a couple handfuls" is the way I cook. It drives my mom CRAZY. "How much of x did you put in this?" "I don't know, enough until it looked good?" 😄

    Oh, a tip for the lasagna. You don't need those No Boil noodles (unless you are in a hurry). I use the regular ones and add a little extra water to my sauce. Assemble the lasagna, cover and refrigerate a couple of hours. The noodles will absorb the extra water and will come out perfectly once baked.

      I pull the corners of the lasagne, (after made and ready to bake) in and add a bit of water. Seal well with plastic wrap, then aluminum foil, bake as instructed. I have yet for one to not be done, in the last 5min I do remove both wraps and sprinkle the last bit of cheese on top, broil till just melty and slightly golden, rest for 20min and serve! Love this part, "Bon Apetit", Kim style.

    I love your energy, are you always high energy and silly like this? I love it.
    I went through a really rough depression phase recently and it really helped me. Watching you cook relaxed me and your personality made me feel better. Not to mention, we all need inspiration to eat sometimes.

      This terrified me, I really hope she washed her hands after touching the chicken. Speaking from experience, salmonella is not fun. I had it when I was 12 and was hospitalized. It’s a scaring experience, so I really hope she was safe

    “Pro” tip: Curly parsley is for plate decorating at cheesy restaurants and buffets. Lol. Switch to Italian flat leaf parsley for cooking and it will add a much better, less grassy flavor 😁

    So, the lasagna with ricotta is typically from Naples.. I make mine like they do in Northern Italy: layers of meat sauce and béchamel sauce! With parm of course as well. So so creamy and delicious. I also add mozzarella because cheese makes everything nicer!!

    I used to be addicted to the food network years ago. One of my faves was Jamie Oliver back when he was 'the naked chef'...no he was never naked lol. I learned how to chop onions like you do from his show.

    You only add sugar to your sauce when using canned tomatoes to balance the acidity level. We jar our own sauce every year so we do not add sugar

    Oh, in addition I also precook my ground beef and throw it in the freezer. It seems like you use more sausage than ground beef, so I'm sure this would work for like sausage, or ground up turkey. It really helps to have my ground beef and my onions pre-cooked because then I'm just basically assembling things. I don't pre-cook my chicken that often, only for shredded chicken that I'm going to use my casserole but most of my chicken is not pre-cooked that's the only exception. My ground up meat I pre-cook and freeze. We are definitely a red meats family, I use a lot of ground beef. We all just like ground beef here.

      I found my spaghetti sauce and stuff not as flavourful when I precook my ground meat. 🤷🏻‍♀️ I just freeze it flat in portions now, the thaw out super quick in a warm water bath and I cook it up immediately.

    Use regular noodles and soak them in the pan for 45 minutes while cooking sauce. They work much better than oven ready and are cheaper.

    Your range doesn't need replacing. It needs to be recalibrated to the correct baking temperature. Call an appliance repairman who specializes in your range's brand. It's not as expensive as you think and it's cheaper than buying a new range.

      We've called to repair it but they don't sell replacement part for the oven anymore - most of the buttons don't work, that's the problem, not the temperature :). I can't program it to the temperature I want. It's over 2 grand to get a new one and I just really don't want to spend the money on it. So I'm not. lol

    I really hope you are just amazing at editing because not gonna lie I cringed watching the first recipe as it looks like you touch raw chicken, then put garlic in your hand and then scrape it back into the bowl then grab salt and pepper. Im thinking of all the cross contamination and just had to keep telling myself "she washed in between for sure!"

    I know this might sound crazy but to my spaghetti sauce I add 1 little packet of sugar substitute (i usually have Splenda). We like it savory with a little bit of sweet and I find this adds just enough of that. Love your videos!

    Hey party people, if you add carrots to your tomato Italian sauce, you won't need to add sugar as carrots are sweet enough to balance the taste

    The sugar just takes the tinned taste out of the canned tomatoes. I don’t use more than 1/2 a tablespoon...certainly doesn’t make it sweet. Speaking of sugar...my neighbor adds sugar to potato salad and macaroni salad. Is that a thing? Tangent!

      Yes it’s a thing! The idea is to mix up mayo, vinegar, sugar, salt, pepper, etc to make a kind of dressing for your “salad” lol😂 anyway that’s how a lot of deli’s do it usually.

    I have never made my own fudge! I got the ingredients to make it for Christmas and never did cause I made a million other desserts and thought “ehh, I don’t need anything else”! Lol But I totally want to try it out for myself!

    Kim, please rinse your chicken in cold water before seasoning. It will clean off the slime the chicken has and any dirty water.

    Brown your quinoa in a dry pan til it starts turning brown. It will d.mell like nuts. Browning it takes the " green" taste out of it. You won't be able to stop eating it.

    Hi Kim! I made the drumstick recipe tonight and it was so good! We also really liked the sauce over rice. I didn't have enough drumsticks (curbside order only gave me one package of drumsticks 🤷🏼‍♀️) so I added a few chicken breasts and they came out perfect. A new recipe to start the new year....YEAH!!!! Thank you...keep them coming!

    When we have left over lasagna we cut the slices and individually wrap them and freeze them for quick lunch 😊

    I know that feeling with the utensils Kim, I had like 3 spatula's break in 1 month, been lost ever since, I've bought I think like 5 different spatula's and still can't find that perfect one. I do wanna get one of those meat choppers though

    I have a kitchen utensil casualty every Christmas. This year, my spatula broke off in my bowl of cookie dough. Wasn’t the first time, won’t be the last time lol.

    Hi Kim!! I have a question for you since you are Italian. I was told once to pronounce Italian with a short i, not a long i because, it's Italy, not Eye taly.🤷 Please verify the correct way. 😉

    Best way to do the fudge is 2 cups of dark chocolate chips, 1 can sweetened condensed milk, melt in microwave. Once melted stir in 1 tsp vanilla, pour into buttered dish, stick in the fridge. The vanilla makes all the difference.

    I use a cheese grater to “shred” my Brussel sprouts. Works great!! 😊

    I made your zucchini back in the summer I think is when you posted it, love it! I love your style of cooking and the ingredients you use, that's why I love watching you cook. And I don't have slow cooker, that's a bonus, that you prefer using your stove. 😁

    Alittle sugar balances the acidity of the tomato 🍅 you don't add alot just alittle so you don't taste it. We are from Naples so maybe that's why

    I'm not a fan of ricotta so my cheese mixture consists of, cream cheese, cottage cheese, egg, herbs, and shredded parm and mozzarella! Love lasagna.
    Also I tried oven ready noodle once, they didn't work for me. Maybe I should give them another try. I could use a simpler way!
    I dont add sugar to my sauce but if its too acidic I will add a touch of cream. My daughter is very sensitive to the acid in tomato, but loves them!
