MOCHA CAKE ROLL | A Filipino Favourite Celebration Cake | Mia’s Cakes & Sweet Treats

- Hi everyone!
Here’s another cake that Filipinos like me all around the world crave for, especially during family gatherings and celebrations. We grew up having this on our table to share with everyone.
This is a Goldilocks-inspired recipe and is easy to follow. It is not your typical mocha flavoured cake though where you combine chocolate with coffee. This cake only has coffee in it to provide that rich bittersweet flavour.
So have your baking stuff ready and get baking!😄
CAKE INGREDIENTS:
6 tbsp white granulated sugar (for the flour mixture)
1 cup + 2 tbsp cake flour
1-1/2 tsp baking powder
1/2 tsp salt
4 extra large eggs, room temp, separated
1/4 cup canola or veg oil
6 tbsp white granulated sugar (for the meringue)
1/4 tsp cream of tartar
1 tsp instant coffee dissolved in 1/3 cup water
MOCHA BUTTERCREAM INGREDIENTS:
250g salted butter
1 cup sifted icing/confectioner sugar
1 tsp instant coffee dissolved in 1 tbsp water
1/2 tsp vanilla extract

Hi! I tried your recipe and it was so good! Thanks for that. But you need to update the ingredients list : 1/4 canola oil for cake ingredients and another 1tspn coffee for the buttercream ingredients 🥂

How long should you let the roll chill in the fridge before frosting? Thanks!
Hi, you can chill it up to one hour or until the cake roll is cool enough for the frosting not to melt when you spread it on. I check every half hour to see if it is cool to the touch. I don’t recommend leaving it in the fridge overnight before frosting as the cake gets quite firm and then breaks when you unroll it.
hi good afternoon ...can i use condensed milk instead of icing sugar for the buttercream of mocha roll?
Hi, yes I think you can. Just make sure to pour the condensed milk in gradually so you don’t make the frosting overly sweet. Add in a little salt just in case it gets too sweet. Let me know how it goes. ☺️👍🏼

Hi, I used a 15x10 jelly roll pan for this cake. I still had some excess batter for this pan actually so this recipe could fill an even larger pan

What if we don't have cream of tartar?
You can use half teaspoon of lemon juice or vinegar
How many cups is 250g of butter?

Ano kayang mali doon sa bread ko nabibiyak 😔
Try mo sya iroll habang medyo mainit pa, yung ok na ihandle nang hindi ka mapapaso, saka wag masyado mahigpit ang pagroll. Then iref mo and do the frosting. Wag masyado matagal sa ref. Enough time lang to cool the cake. Ok lang medyo magcrack when you unroll kasi the buttercream will “glue” the cake together.
