Mocha Chiffon Cake:
Dry Ingredients:
1 cup cake flour [113 g] - amzn.to/3mEzUqm
2 tsp baking powder [8 g]
1/3 cup granulated sugar [67 g]
1/2 tsp salt [3 g]
Wet Ingredients:
4 egg yolks [80 g]
1/3 cup vegetable oil [80 mL]
1/2 cup cup strong-brewed coffee [120 mL]
1 tsp vanilla extract [5 mL]
Meringue:
4 egg whites [120 g]
1/2 tsp cream of tartar [1.7g]
1/3 cup sugar [67 g]
(powdered sugar for dusting)
Mocha Swiss Buttercream:
5 egg whites [150 g]
2 cups (4 sticks) unsalted butter [454 g]
1 1/2 cups granulated sugar [300 g]
1 tsp salt [5.7 g]
1 tbsp vanilla extract [15 mL]
5 tsp instant espresso powder [10 g] - amzn.to/40imWgv
(substitute with 3 tbsp instant coffee dissolved in 3 tbsp hot milk)
Caramel Drizzle:
1/2 cup granulated sugar [100 g]
4 tsp water [20 mL]
1/3 cup heavy cream (room temp) [80 mL]
2 tablespoons butter [28.4 g]
1/4 tsp salt [1.4 g]

@@cookingwithkurt ive tried it b4 i got my license. But the jelly pans here in the Phils. sometimes it doesn't fit its core ;) also if your using an electric oven, whats the heat indicator inside?we all know that oven varies diffrent temperatures.

I followed this recipe for our NYE cake, and it was a hit!! Everyone loved it, soft and moist and not so sweet. Reminds me of Goldilocks but even better!!! I dinn have instant espresso so I followed your substitute. You are my go to for pinoy inspired cakes!! Thank you so much and keep it up!!

Hi Jalynn - yay! Please keep us posted on how your Mocha Roll turns out when you make it. It depends how much bigger your pan is. If it’s just a bit bigger, I’d suggest keeping the recipe as is - the chiffon will just be a little thinner. But you can make any changes you like, any adjustments you see fit depending on the pan size you have. Hope this helps! 😊

Instead of using egg whites in frosting, (im not a fan or meringue frosting) can i use the butter with heavy cream instead? Or if not, can you recommend any substitute? Thank you!! 😊

@@cookingwithkurt Thank you. I liked the frosting you made for the ube cake roll. Do you think the combination of 2 cups of butter plus 2 cups of heavy cream would be stable enough to frost and pipe?
I do not recommend stabilizing heavy cream with butter. If you like the ube cake roll frosting, I'd suggest following that recipe and stabilize the heavy cream using cream cheese, and add instant espresso powder to make it mocha flavored. Hope this helps! :)
