仕込みでも営業中でも、どんなに忙しくても、食材を扱う手が丁寧で繊細、無駄なく着実。そして何より楽しそう^ ^ 凄いなぁ。。
人参の場面は芸術的でさえある。錫の器に映えること！
それと、お鍋の具のお野菜やきのこたちも、切りおきではなくその場でてきぱき捌いて瑞々しいところを投入してくれるので大好き！
そして、この緊張感の中でそのお仕事ぶりを的確に映像におさめる腕もすごい、。
素晴らしいお店ですね！手抜きが一切無い！オーナーさんの人柄や、客に対する気持ちが、若い職人の方々に浸透してます。素晴らしい！食材も最高品！
ただ握るだけじゃなくて、見ていて全部美味しいのが、伝わって来ます。

I been into restaurant business before and It's soo tiring during lunch and dinner especially we during time called "full table"? But when I saw my satisfied customers, it soo rewarding. One thing I've learn when you are a cook? It's not for how much you earn, but It's more on how much you satisfy your customers.

朝〆して数時間おいて血抜きして仕込みの捌きをしてる感じですかね
店主の魚へのこだわりと器とそして和食への情熱を感じます
磯魚はいけすから上げてすぐ調理してもいいですがタイとか青物の回遊魚は〆て数時間置いた方がおいしです
〆て３日熟成させてる鯛ですかｗ恐れ入りました
流石、博多天神の激戦区て繁盛店と言われるだけはありますね
オーダーも忙しくて覚えられないからPOSSでオーダー通してますねｗ

I would rather like to go most tasty sushi restaurant than very busy one. This restaurant looks like sushi factory to me. I love sushi bar mood. I have missed these kinds of mood for
a long time. I still dream of a sushi bar served by a chef who knows my tastes in sushi and my life. A few glasses of sake there will take me to heaven as before.
