Chef/Owners Zack & Diana Wangeman of Sobre Masa know what separates good tacos from GREAT TACOS: the tortillas. In the US, the majority of taco joints use highly processed, mass-produced, low-quality packaged tortillas. They work ok but are mostly flavorless without distinct character. Sobre Masa set out to change that.
Inspired by their Oaxacan heritage, where heirloom corn forms the heart of family meals, Zach and Diana wanted New Yorkers to experience the difference homemade tortillas make. They embarked on a journey through Mexico's corn-growing regions, learning about heirloom corn farming, nixtamalization (the ancient process unlocking corn's nutrients), and the dedicated families preserving these traditions.
The result? Sobre Masa has become a go-to spot for NYC chefs to elevate their taco menus. These tortillas are truly something special! Depending on the season, you can try different corn varieties showcased at their tortilleria/restaurant. We're fortunate to have them educating us on this valuable resource.

the corn is from Mexico obviously.
He's sharing Mexican food and culture within his restaurant and they want to support the Mexican farming industry. It's a fairly simple concept to understand. They purchase their corn from Mexican producers.

Exactly. That's what he means. He spends a lot of money getting the good corn imported so more restaurants buy the product and there is more demand for the farmers crops in Mexico. It's a win win.
