Hi Neal, thanks for watching! Some of our Chinese colleagues from Shanghai told us the same thing. We had never seen that before, and they said they never stopped to think about it before either. Seems to make sense though. Really interesting to see different cooking methods in different cultures. Jiaxing is a beautiful place. We hope to come back soon! :-)
