My Time Saving Tomato Stew Recipe. The Perfect Smoky Party Jollof Or Waakye Stew.

  • Ingredients:
    4 lb of my home made tomato puree
    2 lb tomato paste
    1.6 lb shallots
    2 bulbs garlic (or to your tatse)
    4 large onions
    5 cups canola oil
    2 tablespoons smoked paprika
    3 tablespoon curry powder
    2 star anise
    1.5 teaspoon black peppercorns
    1.5 teaspoon anise
    1.5 teaspoon corriander or cilantro seeds
    3 Maggi Shrimp Tablets
    1 teaspoon baking soda (if needed)
    1 cup fresh pepers (or to taste)

    Sista, I've tried it, the stew was very delicious, i was cooking jollof with it when my neighbours knocked at my door to ask about the meal and tell me that they smelled it at the parking of our block. I was very pleased.

      It cut the sourness of the tomatoes, so optional if your tomatoes is sour

      If it's cooked very well and frozen, u can keep it for months. It's gravy so it doesn't go bad easily. You can keep it in the refrigerator as well without worries so far as urgent fridge is good and power supply is stable

      Always a pleasure dear. Basically tomato puree is a thick sauce like the one I used. Puree however is would be strained after it is cooked a while and cooked some more to achieve a concentrate.

    Very nice! The amount of the dry unground spices that have been dry roasted in the pan seem to be 1.5 Tblsp rather than 1.5 Teasppons. Can you connfirm this?

    Whats the difference between anise and star anise. I'm really new to all these spices and trying to incorporate to see the difference but end up ruining my food. I also learnt that canola oil is not good at all. Kindly read more about it and use a healthier alternative. Thanks for the recipe.

      Star anise is a large see that is shaped and actually looks like a star, it also has a completely different aroma to aniseed. however aniseed are small round seeds like what she used. Google star anise, hope it helps
