    1• Can you make a smaller version?

    2• Why did you wash the rice with salt?
    Answer•• This is a practice I picked from my grandma, and for real I find it to help remove some of the surface starch and prevent clumping. Parboiling the rice until it is al’dente is one known way to remove starch from rice but except you’ve done that a couple of times and mastered how fast it takes to get to that point, you may overcook the rice hence I find this method ( washing with salt and warm water ) easier to achieve the goal.
    TIP** Cosher salt will do a better job than the fine salt.
    3•• WHERE DID YOU GET YOUR BLENDER FROM AND WHAT IS THE BRAND?
    Answer•• The name of the blender is called AAOBOSI , and I bought it from amazon. The last time I checked, this item www.amazon.com/dp/B07J4N9X4R/ref=cm_sw_r_wa_api_fab_iguDFbQM0MMS8 is no longer available but I’m sure you’ll find something similar.
    4•• WHERE CAN I GET THAT POT?
    Answer•• I bought the pot from restaurant depot. You can check the pot section of any Asian Store as well. It’s called a pit pot.

    5•• WHY DID YOU COVER THE RICE WITH FOIL PAPER
    Answer•• I did that to help retain steam in the pot. The steam helps to cook the rice without adding much water.
    6••DOES ADDING BUTTER TO THE RICE CHANGE THE TASTE? AND IS IT DETECTABLE?
    Answer•• It doesn't change the taste and it's not detectable in a bad way , it adds a rich taste to the rice and then again It gives it some shine.

    Thank you so much for showing me how to cook jolof rice perfectly. I am Zimbabwean and have loved jolof for 18yrs but never thought I could ever cook. My first attempt before giving up was 2011. My son was 2yrs at the time. After cooking dinner, I called him to come and eat. When he got to the table and looked at it, he said, "Mom,it doesn't look righr", and wouldn't eat it. I knew ge qA right because I had tasted it as well and it didn't taste anything like what we had eaten at our Nigerian friends.But guess what? I did it all thanks to you. My Nigerian friends say its so good and can't believe I cooked it all by myself . I cooked 18 cups like you did and now my freezer is packed full and I don't see myself cooking again until end of January as its only my 11 year old son and myself. I am so proud of myself. You are a great teacher. Thank you

    I haven't cooked jollof rice in years because i wasn't confident with it so we usually ordered from a caterer. I watched this recipe yesterday and tried it today.. OMG!!!!!!.     British Pakistani here. It’s amazing how similar our cultures cook rice. I’ve made and tried jollof - it’s amazing! I may add a little south Asian twist the next time I make it by adding more chilli😅. It’s amazing. Gonna make it again soon!!

    I like the way you generously added season cubes. I sometimes watch some cooking videos where the person cooking will add just one cube and I am sure they will add more with the camera away because I know for the quantity of food they are cooking one cube will not be enough but they dont want to add more cos of what people will say.       There's nothing wrong frying the tomato puree before adding the chopped shallots, it gives the puree more test that way so both ways work very well for me. Lovely video very well done and your voice was loud enough to hear what you are saying.👌

    Sis. This is one of the best jollof vids. No one mentions that you have to fry till it is not tangy, no mention of reducing the stew till it thickens. This makes the difference between good jollof and just jollof. Thank you so much for sharing.

      The difference between ghanaian jollof rice and Nigeria jollof rice is, Nigerians use to add butter to their jollof and is also Nigeria they have party jollof and original jollof anyway

      YaGirl Malasia Have you visted all parts of Haiti to make that assumption? I can answer for you no. There are different ways to cook. You can go to Gonaives,Okap,Port au Prince, Port salut,delmas, Les cayes, Jacmel and various of other locations and you can see they cook different but the concept is there. My mom makes her legume very different

    No doubt that the delicious rice dishes we eat in the different countries of Latin America originally came from Africa, and then some things were added by the Spaniards and the indigenous people. Delicious!!!! 8 had never seen the preparation of an authentic African dish. Thank you for showing and explaining it so well.

Sometimes my only challenge is that the name of those recipes are not easy to get at all not even in the Market because when you call a name,the market women will get looking at you because they have never heard such n they don't have it.     Love this, I tried this with brown rice and less oil. It was still delicious.
    Brown rice has a different taste to everything but the flavours were fabulous.

      I thought the extra extra water on the meat will rundown the flavor on it, blending everything together and therefore giving them same cook time is a no no, some needs to cook longer than others. There was too much maggi(chicken seasoning cubes) than necessary that diners will unpleasantly recognize at first bite of the rice (at least myself and some others i know do) too much overpowers the natural ingredients and balance is the goal expecially when cooking for a crowd, the onions or shallots should always be fried first to intensify the sweetness(but I give that one a pass since she plead forgetfulness). I also thought her medium of tasting was on the sloppy side. So you see, those of us giving it a thumb down aren't exactly being hateful, we found things that needs adjusting to improving the overall results. With all that said, i found the color of the rice pretty appetizing and would incorporate more bell peppers in my jollof henceforth and also washing the rice with salt is something new that i will emulate. Finally, yes! I'm a Ghanaian and judging through that lenses, i will wait to taste nigerian style jollof rice to settle the age old fued about who makes the best jollof.

      @b afra you obviously don’t watch or listen to most of my videos. Constructive criticism is one I whole heartedly welcome and then make amends. Telling me that adding extra water to cook down GOAT MEAT which is known to be a tough meat for the most part’’ will run down the flavor tells a lot about your comment. Meat like beef and soft chicken can be cooked without adding water . however would you rather cook the goat meat or which ever protein you decide to use without water and then use water for the jollof rice? Rather than get a well seasoned stock from your protein? ( now you see? Judging from your comment which ever way you decide to go, one of them will still be ‘run down in flavour’)! When you cook your protein in its own juice on High Heat for a few minutes it locks in seasonings and even if you add water afterwards it won’t run down the taste ( cooking is science) Now talking of seasonings I used 12 seasoning cubes and 5tsps of the ground chicken seasoning which I showed in the video in total for 18 Cups of Parboiled rice not 5 cups ohh with just 1 tspn of salt. 😅 come onnnn! , and No what you consider unpleasant is contrary to what majority of my clients can attest to. the seasoning wasn’t overwhelming at all. Scroll through the comments to read testimonials from people who have tried this exact recipe to hear what they have to say. I was in my kitchen cooking for my family and you consider my mode of tasting to be sloppy? Be real honey! I think having an open mind will do more good than harm. It is not about being Ghanaian or Nigerian my dear it who makes it and how it is made. I’m glad you learnt a few new things as well. Thank you for the dislike, I need it to grow.
