      @@ubachi820 Olive Oil (OV) contains a natural anti-oxidant called Vitamin E (which protects a recipe by slowing down oxidation of a food or substance that prolongs it to save from rapid spoilage. Otherwise, the Vitamin E of olive oil can as natural perservative to help extend the recipe's life life even when freezing it. Extra Virgin is always best because it contains more Vitamin E from strong natural ingredients of the cold-pressed oil. The lighter it is, the less time it took to make the OV or efforts were made to specifically create a thinner oil for certain usages and recipes.
      A specific amount probably was not given this will vary with amount and size of the container. Eyeing it to ensure that the top paste is covered, is ideal. Others who really love OV will also add a little in the base/ bottom of the jar first. Then, top off the recipe with also about a table spoon of OV. Here is a recipe to give it visual.     This is a fantastic method, I wished I had found this at the beginning of the summer! I used the oven method and you not only have to be careful about burning, you lose some of the tomato because it burns on the sides of the pan. I did this yesterday, it took less time and I lost no tomatoes! But I will say, depending on your blender, you might want to use the sieve right after blending to remove the seeds and skins. I boiled them right out of the blender and it was obvious that the seeds were still intact so I put it through the sieve to remove them and then started the water reduction process. I think this is also how I would make a pomodoro sauce so that its thick with minimal cooking. Great video!

    I just tried this method and it is so much less time consuming. THANK YOU 😊
    Only difference I use is place a cloth bag of fresh herbs in while cooking down at start. Gives an extra flavor enhancement and I usually take ALL TOMATOES at end of harvest so it blends perfectly. Always experimenting. 🥰

    Brilliant. I tried it today and it worked great. Thank you for making and posting the video. I made sure to blend the tomatoes well (a few minutes) in my high powered blender to try to pulverize the seeds at much as possible. The fact that this method blends up the skins is a positive because the skins are supposed to be nutritious. My blender still left some seed bits, but I'm fine with that. They're also supposed to be nutritious. I was looking for the water separation stage in my boiling blended sauce and didn't notice it. However, I noted that you said you cooked yours for about 45 minutes and I used that as my guide. I started to pour off the mixture into the sieve and sure enough, it started to separate right away with the translucent juice filtering out.

    I am so glad I found your videos about tomatoes. This week I tried your muslin bag method except we use a Norpro hand cranked juice master instead of a blender that removes skins and seeds. I am from southeastern Illinois and have had such an abundance of tomatoes this season. This is really really helpful as it saves time and energy yet nothing goes to waste.

    I grew up in Florida and my great grandparents farmed a lot of their food. I remember helping to pick tomatoes to eat fresh and to can. I couldnt help much as a small kid but i enjoyed watching. My job was to make sure the seals sealed the next day after the jars cooled and i took my job VERY seriously lol
