In my recipe, mustard, lemon juice, chili and olives.
I think your recipe is missing it.
I am now in a small town the Philippines, no lemon, no olives, no mustard, no oven like at home, so I added ginger, replaced the lemon by a dalengai it's green like a lime, sweet like an orange, but at the same time has a pepper taste. I fried my chicken legs to light brown, and now everything is in the fridge to marinate.
Tomorrow I will start by soften the onions and after I will put the chicken and the juice to cook and then I will reduce the sauce

@Fatimaxn Barry about the complex thing i am not going to comment.. all I am saying is that people make their videos based on what they know. A Senegalese would call it Senegalese yassa, a gambia would say gambian food because they eat it there not that it belongs to them... a Nigerian would call tchebou dieune jollof rice from Nigeria...I agree with the senegambia terminology as we used to be one country!

My experience is that the result is not so good if you don't marinate the meat together with the onions (for at least 24 h). I use lemon juice instead of vinegar but that's more Senegalese style. The use of green olives is optional.
