THE BEST JOLLOF RICE | Gambian - Senegalese Benachin | How To Make Jollof Rice

    Hello my lovelies! Today, I am making a very popular and controversial dish from West Africa, Jollof Rice. The most popular name for the rice dish is Jollof Rice. However, us Gambians and Senegalese call it Benachin or Thiébou Djeun (Fish Rice) or Thiébou Guinar Yap (chicken and beef rice). Gambians and Senegalese have different versions of this popular rice dish. We have the red and white version. Both can be prepared with fish or chicken/& beef. In a previous video, I made the red Benachin (Jollof Rice) with chicken and beef. Make sure to checkout the video. Today, I am making Thiébou Djeun (Fish Rice), the white version. The dish is prepared differently by different countries. Thus, causing a rivalry among African countries. The question is always “WHO HAS THE BEST JOLLOF RICE?” They are all delicious to me! However, I am preparing it the original and traditional way, Senegambia style. ENJOY!

    Note: The ingredients used in this video are for 10 cups of rice, which is a lot. Ideally, you should cook about 5 cups of rice. Just divide all of the ingredients in half if preparing 5 cups of rice.
    ROFF INGREDIENTS
    • 2 handful or cups of parsley
    • 2 garlic cloves
    • 1/2 habanero pepper (add whole for more spice)
    • Add 1 beef Jumbo cube and 1/2 tsp black pepper
    * Freeze any leftover Roff for future use. Do not cross contaminate w/ fish. Dish out the amount of Roff you think you might need in a separate bowl. If you need more Roff for your fish, add more to your bowl.
    PROTEIN SEASONING
    • Use any fish or amount desired. I used a mixture of large cuts of fresh Red Snapper and King Fish.
    • Other fish that taste great are Barracuda, Grouper and Lady Fish
    • I seasoned my fish overnight with 1 lime juice and 1 tsp salt
    FRYING / SAUTÉ
    • About 2 cups of vegetable oil or conola oil
    • Optional: 1 cuts of dried African snail called Yete and 2 cuts of salt fish
    • 4 medium yellow onions chopped
    • 3 soft Roma tomatoes chopped
    • 3 large garlic cloves chopped (I forgot to mention in the video, but add garlic when the onions are 95% brown)
    • 3 dried bay leaves
    • 1 beef Jumbo cube
    • 1 chicken Jumbo cube
    • 2 small Maggie cubes
    • 1 tsp Salt
    • Knor seasoning (add last if you need more seasoning before adding rice)
    • 1 TBSP Black pepper
    • 10 cups of broken Jasmine rice (or any rice you like)
    * Note: you can pick to use either Maggie or Jumbo. Also, you can use just beef or chicken Jumbo cubes. I like to mix all.
    *Note: reduce oil before sautéing the onions if you want less oil in the dish. However, make sure you have enough oil so that the 10 cups of rice won’t stick together.
    *Note: Remove 2 cuts of salt fish before adding rice.
    VEGETABLES
    • 2 Habanero pepper
    • 1/4 cabbage (insert toothpick in the center of the cabbage help prevent it from falling apart)
    • 1 eggplant cut in 4 pieces
    • 3 cuts of honeynut squash
    • 3 large whole carrots peeled
    • 8 okra, remove head and tip
    * Note: Use as much veggies as you want. You can also use mixed vegetables instead.

    thank u so much my dad is mauritanian I grew up on this food and when I spent a year in africa, I appreciate the senegalese food and culture so much, but I never knew how to cook it and i’m not rlly close with him to ask. now I can share this with my friends and family. thank you

      This Gambian Jollof rice or Benachin. Originated in the Gambia. but most popular in Senegal.

    I used to have a Gambian bf and he made it. It was so good and was trying to find that same recipe. He did use chicken instead, but I think that was because I love chicken.

    Please stop calling this dish jollof rice. This is not. This is Thiébou Djeune the very famous Senegalese dish created by a Senegalese woman named Penda Mbaye. That’s why we called it proudly Thiébou Djeune Penda Mbaye. Also jollof is a derivative of this recipe because when some travelers of those countries came and tasted in my country they brought it in their country and named jollof rice. Jollof was province in my country before colonization. History!

      What are you talking about weirdo! I don't know where you're from, but this IS Jollof rice. It's white Jollof rice. Yes, it's Thiéb, but Thiéb or benachin is just another name for Jollof rice. 🥴🫣

    I'm base in the UK and it very hard to found the yete. Most African store don't have dry snail. Just snail 🐌

    Is the veg oil drained off first? Isn't that a lot of oil to injest?

      You can reduce the oil if you want. This is less oil compared to what my mom uses. I had to convince her that less oil still works 😩. Make sure you have enough oil do that your rice won’t stick together. I cooked 10 cups of rice.

      Nope mbahal is different and is cooked with locust beans. This is benachin Bu wehh( white benachin which has Tomato plums instead of the paste)

      The word Benachin is a bit odd because it described a type of dish than a precise dish, the ones that only requiring cooking pot (daxin, mbaxal, cebu yapp,... ) by opposition to ňàri chin require two cooking pots like mafe, supp kanja, suluxu, yàsa.
      The dish looks good though saf sapp

    When u fried the fish, u didn’t have to fry them firmly, only half fried, when u boiling the vegetables, you add the half fried fish into the pan which will give the fish a flavour a fried and steamed or boiled when dish is ready. Where’s the cassava and the tamarind sauce called dahar ? Try also to start frying the yait with the oil the sooner the better. That’s the master secret that will give the unique taste to it. That Will allow the yait to be Brown and soft when the dish is ready. Where is the netetou or soulaleh or dawada like How the Nigerians call it? Please reduce oil too. This is a Senegalese master cook talking to you dear. God bless. I forgot the kemm called hoñ in Senegalese wolof the crunchy rice from the bottom of the pan 😆also no black pepper in white fish benachin or red only in the persil stuffing or roff if u like and it’s better to use coarse black pepper for the stuffing so u can feel it if u like hot when u eating.Only in meat Benachin u use black pepper.
