    I am so glad to see this is still alive . We use to do it here in NC for the fire department. All the guys that did it are dead and gone . I sure miss them and the old ways .

    Some of the best food I’ve ever had was at one of those places like vfw on the way to Delaware ocean city and back roads of America mostly in the south and west

      Thank you for your compliment regarding the sprayer for applying the sauce. We have used it for maybe 20 years. I must give credit to the Dayton VA VFW as they shared their sprayer for our club to test. Then spec their sprayer to make ours. It is safe to say thousands of gallons sauce have been sprayed on the chicken halves. Last year 160 sauce gallons were used.

      @@brchipprof get a bunch of old war veterans together bbqing chicken and they'll come up with some pretty ingenious ideas. VFW posts and fire departments all do vinegar type chicken BBQs up here in PA/NY as well for fund raising but they use BBQ mops to spread the sauce. I'm definitely sharing that sprayer idea with them 👍

      We also switched to fine salt and black pepper to learn that the dry spices spray without lumps if the sauce is mixed with the vinegar fluid at least a week ahead of the cook .

    I am from Staunton, I live a long ways away now, but these size pits are "normal" for the area. Major fundraiser for the non profits. Very group has a slightly different variation on the sauce. It is a very specific thing to Rockingham and Augusta County. I have heard some parts of Pennsylvania and New York with a German heritage do something similar. Keep up all the great work and keeping our traditions alive.

      Thank you for your comment regarding the Rockingham and Augusta County BBQs. Since you are from Staunton, most likely heard the name of Dave Shirkey as a BBQ Master from Dayton, VA. He was so generous with his time to grill for many organizations sharing his recipe with anyone that asked. For him it all started with fundraising for his church for it to multiply to so many cookings throughout the Shenandoah Valley. We in Mount Sidney Ruritan have three brothers third generation from Uncle Dave and a fifth generation as a grandson member of one of the brothers. Many of our members started their Chicken BBQ experience while in high school FFA, as both instructors were Ruritan members and their clubs used BBQ Chicken as fundraisers. The FFA had fundraisers over 50 years ago so there is a multitude of experience by the pit even now. All of us are just a lot older. One other mention I can not leave out we are blessed to have a retired BBQ Competitor to join Mount Sidney Ruritan Club. So now we practice fellowship, good will, and community service at the BBQ pit as part of our community outreach.

      @@brchipprof I have heard the names. Crawford Brothers and their mobile pits and Churchville Ruritans and the Fire Department fundraisers are the ones I know best. As a child and later as a volunteer at Swoope Fire, I have been to most if not all of the Fireman's Carnivals through the area and had everyone's chicken. I have Churchville recipe and will make some from time to time so I can get a taste of home.

      I to have enjoyed the Crawford Brothers Q. Have you had chicken from John "Boy" Acker in the Waynesboro area? He also had a trailer pit. I'm not sure who bought his rig after he passed. Regardless which group/pitmaster has prepared the Q it all has it's special flavor and so good.

      Thank you for asking. The pit is a concrete slab just like your sidewalk with cinder blocks stacked 3 high for the pit walls with concrete poured in the block voids. The rack frame is welded 1/2 inch schedule 40 black pipe with flattened expanded metal steel grate welded by an old stick welder on Dad's farm in 1976. Each rack took a joint of pipe to be cut for the various lengths required. Be sure to check on the dimensions of the expanded metal so the waste is minimal. Our racks hold 35 halves averaging 1-3/8 to 1-9/16 pounds each, the grate is 30" x 36" with 72" side handles. The walkway around the pit is gravel just to be easier to walk on instead of concrete. If you are considering building racks be sure to do your homework to avoid some expensive mistakes. Such as: Health Dept regs. Will the food prepared on it be sold to the public? Does the health dept in your area require that the food be prepared on stainless steel grate instead of the carbon steel grate that we are using. At present a stainless steel grate is not required here. But those racks are pressure washed to. The roof over the pit is required for an open pit like ours. Just a few thoughts I hope I have helped. If you are in the area on a cook date please stop in, buy some chicken to benefit the non profit group beneficiary, and we will be happy to answer any other questions face to face.

    That looks awesome! My pasrtor father in law does a big chicken bbq fundraiser for his church. How did you guys build that sprayer? I'll build him one for fathers day if you tell me how. Looks great regardless! Keep up the good work

      It is an Ace Hardware 3 gallon built by Chapin. The small pickup plastic tube was replaced with a 1/2" diameter stainless steel tube. You will want to bend the tube slightly so it will go to one side of the container. This was done so you can tilt the sprayer to one side to get as much of the sauce out as possible. The sprayer tank pickup tube hole will need to be drilled so the larger tube will slide in. I bought a stainless compression female fitting that was tightened over the tank fitting and was then tightened over the new tube. Once the new tube was set in the tank the stick out length was determined and I tig welded a stainless hose barb on it. A stainless pistol grip type sprayer was found on Amazon. The stainless barb was found to fit the sprayer gun and food grade hose came from a dairy farm supply the same size as a standard water hose. Thanks for asking and best wishes on your build and gift. This sprayer setup has been used for over 20 years with hundreds of gallons of sauce to go through it.

      As a former BBQ Competition Cook. This is something you never ask another Cook. I do not know the recipe of the mop they are using and would not ever ask them for it.

      It's simple... you cant over power/season the chicken with whats in the sprayer. So its more of a keep the chicken from drying out/burning thing. I use 50/50 water and apple cider vinegar. You can get wild with whatever you want really. Applejuice etc. Just spray with something that compliments the seasoned chicken. I didnt see them season the chicken here so maybe their sprayer has it all in there. Thats another way to do it.

      -Thank you for your comment. I have never considered the difference between BBQ and grilling and I can see your reasoning. What ever its called it is tasty! The video was compiled to promote the fundraising dates to insure a sellout for the beneficiary organizations, all are non-profits. As a non-profit Ruritan club we use this as "a farm to table" fundraising experience to finance our community outreach. We are located in the Shenandoah Valley of Virginia and agriculture is the largest business in the state. Our local farmers raise the beef, crops, dairy, and poultry for all to enjoy in our meals.
