    Made from 3 simple ingredients (4 if you add raisins), these oatmeal cookies are so easy to make and so fun to eat. Since they are just basically oatmeal and banana, you could have them for breakfast instead of your usual cooked oatmeal. How sweet the cookies are will depend on how ripe you bananas are and whether or not you use the raisins.
    I deeply apologize that there was a printing error in my book The Secrets to Ultimate Weight Loss on pages 146 and 147 for the recipes. Instead of 8 bananas it should have said 4 bananas. If you use 8 bananas you will have to double the amount of oats.
    Here is recipe from page 147 as it should have been written. The errors will be corrected in the next printing.
    Oatmeal Cookies
    Ingredients:
    4 VERY RIPE bananas
    3.5-4 cups of gluten-free rolled oats
    1 Tablespoon cinnamon
    1/2 teaspoon vanilla powder (optional but good)
    1 cup golden raisins (optional)
    Preparation:
    Preheat oven to 350 degrees F.
    Mash bananas. Stir in remaining ingredients. Using a retractable cookie scoop(or a 1/4 cup measuring cup) scoop batter and place on a Silpat or other nonstick silicone baking pan. Bake for 30 minutes or until the tops of the cookies are no longer sticky. Gently flip over and bake for an addition 10 minutes/ Let cool. Makes about 24 cookies. You can also "cook" these in a food dehydrator until desired level of crunchiness is reached.

    This weekend I made these substituting the bananas for one 15 ounce can pumpkin +2 tablespoons of maple syrup. I swapped the raisins with cranberries and the cinnamon with pumpkin pie spice. It makes beautiful orange and red cookies! Same texture and bake time as the original banana raisin.

    To get crunchier cookies I don't have a dehydrater so I leave them in the oven once turned off, let them ''cool'' down slowly and with constant checking I can get these babies to a nice crisp!

    if you want to crisp up the bottoms then throw them into your air fryer for a bit.

    I was craving something sweet and crunchy last night so I decided to try this recipe. I only had a little less than one cup of oats left so I just mixed it with one banana and a little cinnamon. They made six cookies and came out perfect. They satisfied my craving perfectly. I ate three and I’m saving the other three for today! 😋

    Hi there from Ningbo in China. I make these regularly for myself. My expat clients love these and i taught them to use the leftovers from making Oat milk which is binding. I have a class I teach in my 28 Day WFPBNO program which is called “Herbs and Spices Make food Nicer” where I show how to use herbs and spices to add variety. I use reusable parchment paper which works fine. I also have a netted silicon mat which allows for air flow. I use whatever dried fruit i have left over to add. I have cookies for breakfast now along with a cup of home made soy milk. I will recommend this video to my students. Would love to interview you for my program.     the book also says it will yield 24 (1/4c) cookies... i made my batch without the raisins and it made 12 (with a little bit of extra dough to nibble while the rest were baking :o) totally forgivable mistake, Chef AJ, they are DELISH! thank you!

      i didnt have any apples or raisins so used a handful dates i chopped small & a carrot i grated on a box grater on the side that makes the carrot come out soft & fine & feathery! Terrific! Yay!

    Silicone sheets vs parchment paper, haven’t researched it yet but paper of course decomposes virtually instantly whereas silicone has no doubt huge embodied energy along with eventual disposal issues. Silicone by itself is a toxic substance.

    Just made these today and love them! I did add the raisins, baked for 30 min, flipped them and baked for 12-15 min more. I like them crispy like Chef AJ does! My question is how to store them so they stay crispy?! Thanks for any info....

      Unfortunately you can't get them crispy without oil unless you dehydrate them

      Really depends on how crisp you like it. I would start with 8 hours and then flip.

    What temperature would I use on my dehydrator to do these cookies? I saw where you commented about doing it for 8 hours and then flip. After flipping how long do you continue dehydrating? Thanks Chef Aj!

      It depends on the recipe, but applesauce, canned pumpkin and mashed sweet potato could be used.

    hi Chef AJ, I have your book here and it's clear that on p.147 the Cookies need 4 bananas, but on p.146 the muffins - I'm still unclear - if you halve EVERYTHING, including the 8 bananas, you get the same recipe as the Forks over Knives one. ie 4 bananas to 2 cups oats etc....so it seems to me the 8 bananas + 4 cups oats is correct? If you change to 4 bananas, then wouldn't you need to also change to 2 cups oats, instead of the 4 listed, etc? Just need to clarify for myself - thanks so much for all your work x

      So in my book it's says 8 bananas for both and I think it should be 4 if you are using 4 cups of oats. I think it depends on how toothsome you like it. You know, I didn't even want to put any recipes in the book? That's why it took another year. I never even cook with them!
