Could the vinegar trick, just simply be decreasing the glucose spike brought from an intake of a FAT.. fat does that when its mixed in with pasta, bread, ice cream, donuts etc and vinegar is know to cut and split fat
Visual examples in this short clip are that of carbs mixed with fat... Foods she would be referring to would likely be foods mutually inclusive of carb and fat
When a non fatty carb source is eaten, spike goes up but drifts back down relatively quickly
    Its all about context.

Yeah, those latest "sugar\carbs bad" shorts ignore the fact, that yeah, you have less glucose spikes, but you destroy your liver, pancrea, intestines if you eat something you are not used too. Too much acid is bad, too much spices is bad. Technically anything "too much" is bad. If the auditory is Americans, I can understand. It is in culture to eat tonns of food and drinks litres of sode per day. But applying the same to Europeans and Asians will be incorrect, as amount of consuming sweet drinks is much smaller. As you have Italians, who consume carbs on big scale, you have Asians, who consume carbs by putting rice almost everywhere. And still they are fine.

Who exactly is this informaion intended for? Who is eating a big bowl of pasta and the craving more things? A big bowl of pasta is very filling. This doesn't take into account people with GI issues who definitely shouldn't drink vinegar, or people who rely heavily on calorie dense foods like pasta, rice and sugars to get them through their busy days, laborous work, and for dietary reasons. Calorically dense carbohydrates and sugars are how i maintain a healthy weight, without them I end up very thin and dizzy. Some of us rely on these foods to keep us health, we're all very different, blanket dietary advice is typically never helpful.

Being afraid of Glucose-Spikes is just stupid. Totally. A in further declining spike is never a problem, The problem starts when you have constantly high glucose levels. I have studied medicine and this basics are learned already in premed.

I think maybe you should tell people that they shouldn't overdo this because it can damage their kidneys I mean the vinegar even if it's a tablespoon in water some people like pasta three times a day and that's too much over a month on the kidneys great video by the way
