    I'm 66 almost 67 and I remember every restaurant we went to they always gave you a small salad lettuce tomato maybe a little dressing before they brought you the meal without even asking... our diets have changed because of the food industries prompting bad habits

      They still do it in German restaurants but the dressing is full of sugar. Oil and vinegar dressing would be so much better. I don’t like sweet salad

    food doesn't empty from the stomach that fast. What is likely happening is that the vegetables are providing satiation that then translates to reduced food intake which is then controlling the blood sugar better, provided that she's referencing a study showing this timing effect. The soluble fiber in the vegetables absorbs water and becomes a goo inside your stomach.

    In Greece we eat our salad with extra virgin olive oil feta cheese and oregano. The carbs comes later when you deep the bread in that sinful olive oil at the end.

    Fiber can be abrasive on the gut for those with a compromised mucosal lining causing leaky gut and blood in Stool. (Speaking from experience). Coating any vegetable fiber in olive oil or butter helps. (Legumes too). Fruit fiber is usually a little softer so isnt as big of a deal. But same with nuts as well if you're big on those. Make sure you soak them in water first before you consume. Your colon will thank you.

      I'm curious, what's the difference between vegetables and legumes? French is my first language, so vegetable for me is legumes in French. I was once asked by customs " what do you have in your luggage?" I didn't know the work vegetables, so I said, légumes, he let me go.

      @2005christian1994 Legumes would be Beans, Lentils, and any other "Pulses". When we say to Vegetables we are generally referring to any Leafy Green, Root, Tuber, or the fruiting body of the plant itself like a head of Broccoli, Cauliflower. Cucumber is technically Fruit, Peppers, Tomatos etc.

    How do we know that's absolutely correct? How do we know that eating a carrot prior to a meal will coat intestinal walls, blunting the absorption of glucose? I mean we know it's well to eat fiber for those reasons, but must fiber come first and not during a meal?

    Explain one thing ......we eat salad first...and then follow it up with proteins and carbs etc...but will it not all get mixed up in stomach ? How does this process works ? We eat salad, but its not going to reach upper intestine immediately and be able to create that mesh. We eat salad, and dont wait for the rest of the meal. We eat immefiately after the salad. Then how is it posdible ? Doesnt our food stay in the stomach for coyple of hours ?

    Hmmm, not sure about that but I do know that the stomach holds things like vegetables and protein and fat(meat) in the stomach to mix with stomach acids and help prep it. It’s then slowly released into the duodenum. This will slow the transient time of things like carbohydrates into the system. Simply changing the order in which you eat your food( meat and vegetables before carbs) can reduce blood sugar spikes and reduce average blood sugars.

      I mean, it is a vegetable, but I understand your question.
      It's a starchy vegetable, and spikes insulin.
      I would say if you do eat potatoes, don't peel them, leave the skin on, because that's where most of the fibre is, and let the potato cool down before consuming. It changes the molecular structure of the starches to be more of a resistant starch.

    What I don't get is this, if any food we eat all in one meal goes to the stomach, and until the stomach has not disolved those foods, it will not open the valve to the intestin... Maybe, you need to eat veggies at least 30min before any other meal?

      @@OldManDave1960 There is the new disease of obesity and metabolic syndrome that is not caused by carbs but is caused by the processing of foods using vegetable oils and refined sugars. To medicate that disease we go back to eating healthier that is eating meat, dairy fruits and honey and whatever other plants as long as we react well to them and as long as they were cooked. Raw vegetables is either indigestible by human or might include toxins. Cooking can medicate either or both.
      Recommending eating fibre as a health is a psychopathic advice that looks down at the people who are unable to manage their weights. It blames them for their obesity so they get punished by eating the non edible non digestible to stuff them up. On top of psychopathic evil nature, it is damaging to gut health.
      Rather the recommendation should be opt for more meat then organic raw dairy and get carbs from low fibre low toxins sources that are digestible, welcomed and non inflammatory to the gut and immune system like honey and fruit.

    I eat my proteins first and then I eat my carbs. That causes the carbs to very slowly enter into the bloodstream. I am a diabetic. This is how I take less insulin. In fact, I don't have to take a shot for my breakfast if I do my workout right after I eat.

    I am wondering how the fibres go first in the intestines? I thought they go first in the stomach and then of course are mixed with the other food coming few minutes after. Then, they probably arrive to intestines more or less at the same time, since the time spent by food into the stomach is at least one hour (and can go up to 6 hours), isn’t?

      Yeah...mean in practical terms, her recommendations do work. People wearing continuous glucose monitors have tested this plenty. Adding high fiber foods, protein and/or fat to your meal, blunts glucose spikes. Eating them first, seems to work particularly well.
      But her explanation doesn't make sense to me either, for the reason you stated.

    you're also restricting the absorption of nutrition
    there is no need to worry about sugars if you are consuming just as much calories from each protein and fat -both of which will also slow do sugar absorption but enhance nutritional absorption

    That goes against the Italians way of eating. I don’t know if all Italian people do this, but I know of some. They eat their salad after their meal because they say it digest their food in a more efficient way.

    Lady when we eat anything at first it doesn't means only the first thing will go into the intestine. Everything together will digest and then will go into intestine together.. Our digestive system is not run by an AI tool, to digest one item at a time Or first thing first..
