    Nonno was absolutely right with his words of wisdom. My advice is that if your family has recipes that you love, get in the kitchen with them and learn from them as much as you can. The BEST recipes come from the people who love you and cherish that time with them. Spaghetti Carbonara is my absolute favorite!!!💕💕💕

    These two precious people make me so happy. It’s like seeing my grandparents again! I feel like I know what they looked like in their younger years. Nonna still has her youthful beauty and smile. Nonno is still so handsome, and oh that beautiful thick white full head of hair! Wisdom looks beautiful on them! Love to you all!❤

    I'm a fine dining Italian Chef and I have to say Nonna's Carbonara is spot on. Most Italian restaurants don't use the white wine but for me it's a must.

      You're Italian, but you think onion, white wine, parsley, butter are spot on? Let's ignore the pancetta cause guanciale is already hard to find there. Ma che cazzo dicci ou?       ​@@abrielrobertsson4160well when they moved here whether it was America or Canada they adjusted the ingredients to what was available to them so to them this is as real as it gets and unless you are the pasta queen the everyday person can't afford pancetta. Thing's have changed over the decade's a lot more ingredients are available nowadays but their expensive as hell compare to Italian prices such as good artisan bread it's $6 & up depending on the bakery you go to, good legitmate Italian country approved pasta cost $12 while the same size package for cheaper pasta cost $1 something change and for thumb size worth of real parm cheese cost $4 sorry not sorry Thing's are expensive here in the states and up where stairs in Canada

      @@mercedesvelasquez8781 Look, I know ingredients can get really expensive, but let's not claim that extra ingredients which do not belong in a carbonara are spot on. You can do whatever you want with any dish. Hell, it might be even tastier than the original, but it's not the original, period.

    Thank you for sharing this. Spaghetti Carbonara is my favorite meal that my mom makes. When I wad young, we lived in Italy and my mom had a wonderful friend named Maria. She and her husband, Giuseppe, owned a wonderful, authentic Trattoria (like a small authentic restaurant). We always raved over Maria's Carbonara, so Maria kindly took my mom and me into the kitchen there and taught mom how to make her family's recipe. 😊 🍝 It is one of my favorite memories, and my favorite Italian dish to this day. This reminded me of that cozy kitchen in Napoli, and all the warm feelings that come from cooking together. 💗 Food is love.

    Your grandparents are beautiful people. I'm 46, no more grandparents or my mother to get advice from. I still have my dad who's 67. But as we get older you crave their presence and wisdom. I wish them both good health.❤

    Our Bisnonno grew the best green leaf radicchio. He would call it Radichi or something like that. Haha. He made the most amazing salads but you do have to get used to the taste. He brought the seeds from Italy when he migrated here to the US so many years ago.

    Great advice. My parents worked their whole live aiming for retirement. My mother died of cancer at 56. You never know if you'll even get to retirement.

    This may be my new favorite channel. My grandparents were immigrants from Germany right before WW2. They both died when I was younger. Never had the chance to ask these questions. This reminds me of them💜

    Nonno's advice is solid for a lot of people but I have ADHD so I'm sticking with my many things lol. Most of them do fall under the same umbrella tho! Also he's so right, getting sick changes literally everything. I'm not even 25 yet and I have been made permanently disabled due to chronic conditions. Don't ignore or forget about disabled people, if you are blessed with a long life you will likely join our ranks at some point.

      The way to do it is to drain the pasta first, put it in a bowl and only then add the eggs and pecorino mixture and the pan fried guanciale. Many people like to put the pasta into the warm pan where you've previously fried the guanciale and slowly add everything and some pasta water but it's too much work for my lazy ass. The important thing is that the pasta needs to be hot enough so that, as you keep mixing, the cheese melts and makes the sauce more dense, but not scalding hot, otherwise the eggs will cook instantly.
      Also, if you don't want a runny sauce, the proportions I use are: 1 whole egg + as many yolks as there are people for up to four people eating it, or 2 whole eggs + yolks if the people are more than four. But proportions are entirely up to you, that's just how I like it. The pecorino should always be A LOT. It's a national treasure, the more the better. No need to add salt or butter to the guanciale, it's already greasy and salty enough. Just season the eggs and pecorino mixture with a bit of salt and pepper and you're done.
      If you can't get your hands on pecorino and guanciale, parmigiano and pancetta are valid substitutes

    Ohhhhh I love love love Italian food and culture!!!! And the language"FORGET ABOUT IT"!!!!!! Looks delish (MOLTO BENE) and such simple ingredients and easy to make. Those are the best cause those recipes/inventions probably came from whatever was in the house at the moment. They're the most comforting food ever.       I think my love of pasta came from a neighborhood Italian little store called Severinis me and my mom would walk in and I remember seeing all the diffrent kind of pasta!! All the shapes,I started remembering the names and I to now have a particular pasta for each recipe 😊. And the smell of the diffrent cheesees and meats. Wow what memories. My mom took us to an Italian pizza place COMOS ohhh was that a pie!!!!! 😊

      It's very original and I'm sure it tastes delicious, but it's definitely not the "correct Italian way". The only things that it has in common with the actual carbonara recipe is pasta and eggs. It's awesome to experiment with food and try new combinations and variations of dishes, but don't claim something is made the traditional way when not even the sweet lady who made it has done so

      @@bleachnbones7107 been a while since I watched but as an Italian I can say that traditional carbonara is pasta eggs guanciale and pecorino. Common substitutes are pancetta and parmesan which is more than fair for somebody not located in Italy as they might be hard to locate otherwise.

    I love his garden. My friend's grandpa in Niagara Falls had a big garden in his backyard. When we visited, he said to me "come on, come on" .... with vowels added to the end of each word. We went into the basement and he had prosciutto after prosciutto hanging from the ceiling.

    According to another unverified hypothesis a young Italian army cook, Renato Gualandi, created the dish in 1944 together with other Italian cooks working for the allies for a dinner for the US army as the Americans "had fabulous bacon, very good cream, some cheese and powdered egg yolks".///
    So, i believe the americans had something to do with the invention of this classic italian recipe 😊.
    And kudos to the lovely Nonna, she reminds me of my own nonna "la grande nonna Ida".
