I found this channel through Vanessa‘s Girl With The Dogs channel, and I absolutely love it. In this particular, one, every time I saw Mama, I saw Vanessa! I never really noticed how much alike they look. This recipe looks absolutely amazing and I want it right now. I love the idea of goat cheese with it. That has to add such a special tang to the soup. I’m gonna remember that trick!
I was just thinking how much they look alike too! Crumbled goat cheese on soups like this makes everything better! If you like it, you should you try pizza w/ red sauce, Italian sausage (chunky crumbled kind), caramelized onions and goat cheese)…. It’s heavenly!!

I am not sure what type of peppers the family used in their video, but they looked really nice! In Texas (at least, as far as I can tell) using fresh red bell peppers may be the most common choice, but someone may disagree with me on that. The roasted red peppers sold in jars seem to be made from bell peppers, too. All of this is kind of funny and surprising since we are so close to Mexico and many of us aren't afraid of heat. 😉 But I guess the bell pepper's availability and affordability causes them to come out on top.

Oh you should! 👍I totally understand being intimidated. But I would encourage anybody at any cooking level to try this one. I agree with them - it has quite a few steps, but it can be easier and less overwhelming to cook in stages. It can also be a good idea whenever you are running short on time. I love simple soups, because they are much harder to mess up! 😂 Plus, they allow you to customize the spices and seasonings to your liking. If you decide to do it, I hope you enjoy every bite!! 🤗 (I want to do it too, I just need to figure out which type of peppers I'm going to use. 🤔)

Okay, so after doing some internet sleuthing, I think they are most likely * drumroll * sweet pointed peppers! 🙂I've seen some photos on Google Images that look just like them, different colors and all. I have also noticed that the names Romiro pepper and Romano pepper are used interchangeably with sweet pointed pepper. I can't seem to find them in my area, but I think that any sweet and mild pepper would work well. 👍
I love you passion for making truly amazing fresh food. A few of my chef tips. I am Chef Pete. When making amazing béchamel Sauce, butter, flour, cream/ milk are all at room temp. Room temp butter, is butter they is flexible at room temp. They call it plastic butter. When you combine both flour & butter shift the flour. Onto wax paper or parchment paper. It makes the flour airy, no lumps. When you combine the flour & butter, as the butter is in the pan wait to smell the nuttiness of the butter it will happen when you see the foam, then add in the flour. Equal parts. Whisk in until both butter & flour come together then whisk till you cook off the raw flour. 5 mins of whisking. When you add the milk small amounts at a time. Your tempering the milk to the flour & butter. Do this way no raw flour taste, and no lumps. 2% milk is fine. Whole milk is best. Butter to thicken with two tablespoons of butter then cream. White pepper to start. Then black pepper or multiple color pepper to finish. There is just something about this combination when the fresh milked colored pepper corns hits the hot sauce the oils from the black pepper release. Omg Mmmmm amazing. So to take this from a French sauce mother base to an amazing Italian base you use Fresh graded pec cheese with the black peppercorns. Once you add this to the freshly roasted red pepper purée to make the soup both have to be at the same temp. Once you combine the two mmmmmmm the smell is going to invigorate your senses, and taste buds. Once combined warm it up to soul service temp, and enjoy with some homemade fermented dough Italian bread.
To make the peeling of the peppers easier place them into a brown paper lunch sack. You know then are ready to peel off the skin when the brown paper is soaked from the steam.
