  • It is easier than you think to make the prefect potato flatbread / roti at home. This recipe has only two ingredients, but end result is beautiful and tasty.
    All we need are 2 cups of all purpose flour, and 4 medium size yellow potatoes. Make sure that the boiled potatoes are very hot when you mix them with the flour. The heat from the potatoes and liquid will start the cooking process of the wheat flour. This crucial step makes sure that the flour absorb enough liquid to make the final flatbread / roti soft and tasty.

    They remind me a lot Mexican «tortillas de harina» (wheat tortillas), but we just use wheat flour, salty boiling water (very very very hot, this is crucial, too) and shortening (vegetable fat, oil). The proportions are 1 kg of wheat flout and 200 gr of vegetable fat/oil, salty boiling water as needed. I will try yours as soon as possible.

    In case you need to save time or you don't want to measure the ingredients, you can add flour several times into the hot potatoes, stirring with a spoon at the same time until they form small lumps (I did it directly in the pot so the temperature won't drop too quickly). Then shape them into a ball and role them with some flour to prevent sticking. It will also work, although there won't be much gluten in the dough.

    I would add a teaspoon of cumin powder to the mash potato before kneading in the flour. Love the recipe.

    Roti是我去印度餐厅必点的。吃起来感觉与一般面饼不太一样,原来是放了土豆的缘故。印度人还喜欢在表面放一层酥油煎一下再吃。缺点就是太好吃了,多吃几次一下子就长胖了。楼主,建议你做点印度菜,譬如各种tawa fry (mutton/chicken),真是很美味。

    其实小高姐鼓起勇气直接用英语出镜或者用英语直接解释料理过程的话,肯定follower爆棚,偶尔也收看在美国的韩裔maangchi的频道,她韩式英语口音挺重,但比较活泼,主要是料理方面专业英语,好像也没那么难,但因为用了英语,她的订阅量是几百万啊,影响力非同一般。

      不同土豆的含水量是不同的,需要根据软硬程度分次加面粉,特别软肯定是面粉加少了,下次先少煮点土豆练练手,我有一次照着小高姐的配方做南瓜饼,最后加了巨多面粉才达到效果,因为我的南瓜含水量大

    Roti is a indian dish. We indians generally make it with whole wheat flour, kneaded with water. Some times we use all purpose flour(maida)and kneaded with water.
    We don't knead with potato. We fill in potato with added spices and herbs , that is called "Aloo ka paratha ".
    This look like a Roti, but purely it is not.

    This is an Indian recipe.. We call this aloo roti or aloo paratha.. U can also make various stuffed paratha using cabbage, paneer, potato, peas.. Its v common dish in India

    Since you titled the video 'roti', I must correct it so as to avoid confusion. This particular recipe is of ' aloo paratha', not roti. Roti doesn't use any potatoes, just plain flour. Sometimes salt and oil, it varies from region to region.
    When you combine the flour with vegetables and oil, it is called paratha. Although, the original recipe demands spices and condiments.
    BTW, I do enjoy your videos a lot.
